I’m Vietnamese born and raise in New Orleans , I will say California and Houston will give the NOLA a run for their money when it comes to Vietnamese food.
So many bigots upset about the way multiple cultures influence each others food. Creole cuisine is the fusion of cultures to begin with. Everything changes! No matter what, we all shift the culture.
Vietnamese food is French influenced, so it fits in New Orleans.
The number of Vietnamese dishes that is influenced by French are pretty small. The best authentic Vietnamese food is oriental in flavor, cooking methods and ingredients with the use of fish sauce.

Speaking of Beignets. If you go to Cafe Du Monde, where that dessert is the defining item, a large percentage of the wait staff is Vietnamese.
The French did not teach Vietnamese how to make a clear broth for Pho. Please get the fact correctly 😮

With the rise in popularity with Vietnamese food, so has the prices. $12-15 for a bowl of pho?? Stop. This food used to be for the everyday person. Not anymore. Congrats. Enjoy.
Archbishop Philip Hannan in my opinion is probably the most influential reason that there are so many Vietnamese in New Orleans.
It’s nothing like authentic creole and Cajun food. It’s perfect how it is. Gumbo and po boys are delicious. Southern food is delicious! Vietnam food is delicious but somethings are better as the original.
