Happy to share with everyone my method to obtain clear/ glass like dehydrated fruits.
My recipe includes an initial baking step prior to dehydrating the pineapple in the oven which is the secret to obtain a clear, translucent appearance compared to the normal dehydration processes.
The time for the initial baking and dehydration can vary slightly depending on the fruit ripeness and thickness of the slices, so keep that in mind when trying this recipe. It is important for the fruit to have a translucent appearance after the initial baking before starting the dehydration.
Chips should be kept in airtight container but they will eventually soften, they still taste great when soft but can be always returned to 175ºF-80ºC oven for a couple of minutes to be crisped up again.

I saw how they stuck so I sprayed some baking spray over the silicone mat - peeled off much more cleanly!

Hello thxxx for sharing such a creative idea of candied fruits ,,I don’t have a. Silicon sheet ,can I do this process on normal parchment paper baking sheet ,baking paper I mean that we use to line the baking tins
With the backing paper the fruit may curl up and will not be as flat, there is also the chance that once the fruit curls up they wont be as clear. You can still dehydrate them that way be they will probably be more opaque.

Happy to share. You can try with parchment paper, but to obtain a nice flat chip the best results are achieved with the silicone mats.

The initial baking is important if you want to get the clear look and they will stay flatter using the oven and silicone mats. You can use the dehydrator for the dehydrating step. Or if you don’t mind them being a bit more opaque you can just use the dehydrator without the initial baking.

Try to use a basic shaker to cut out the pine apple rim and I was use to cut the middle bone out with a jigger. Work just perfect 😊

Yes, it can be done with oranges, I'm actually just working on a video for oranges and it should be up in the next couple of days! In a dry not humid climate this can last for a good while after completely dehydrated, but they are very susceptible to humidity and will soften.

Can we use parchment paper instead of silpat?
Thanks! Best results are achieved with the silicone mats, you can try using the parchment paper but the chips may end up not so flat since the paper crinkles up with the juices.

I have never tried with canned pineapples. I believe they will be harder to slice but you could give it a try. Let me know!
Thank you for sharing! I just made these, and dont know how to contain them. Is it okay to box them up room temperature? I’ve put some paper towel sheets in between the slices, and I’m afraid, they wont stay crisp. Actually, they are not that crispy at all - and I’ve baked them for 2 hours. Should I give them another heating before serving?
Depending on the thickness of the slices they may take longer than 2 hours to be completely dehydrated. You can return them to low temp oven for a little longer. Like most dehydrated fruit they do loose crispness after awhile, specially since this are so thin. They are still great to eat like that but you can always return them to low temperature oven for a few minutes to crisp up again. They are better stores in airtight container or in a freezer bag with most air removed.

Can I use silicone paper instead of silicone mat?
The silicone paper usually crinkles up because of the fruit juices so the chips curl up instead of staying nice and flat.

@@이건희-v1s I have not made them with teflon sheet, parchment paper doesn't work very well. for the best results still silicone mats are the best.

You can, but the slices may curl up as they dry and not be as flat.

I feel like if you cooked them in a corn syrup or sugar mixture and then did this they would be more translucent
Cooked in syrup the traditional method used, amd my method doesn't have the added sugar, but both can be used. Thank you!
can dry banana with this method?
Yes you can use the same method for bananas as well. The bananas don't require as long of an initial baking since they are soft already. On my Instagram I have some pictures of banana Chips using this method.

You are using a lot of energy to dry a couple of thin pineapple slices... They look neat but it's not very cost efficient.
