Jamie you are a life changer! I was brought up on frozen read-meals and even the thought of cooking was chore... Then I had kids and wanted to feed them better, thanks to you my oldest son is now almost 5yrs and has never tasted a frozen ready-meal! Cooking is now a passion of mine and a family event. My oldest helps making Yorkshire puddings, knows ingredients to simple dishes and how to cook them. My 2-year old loves to cut/pull/break veg for our meals. Thank you for everything you have done, doing and plan to do!
you know what Jamie, I can honestly say I have never seen you cook anything I have not wanted to eat right there and then! This is no exception.. so simple and easy.. can't wait to give it a go!
I went out to pick some wild mushrooms with my dad today and I made them like this and it was hands down the best thing I ever cooked. Thank you so much for the recipe. ❤
I like this recipe and I've made it a few times. I think it's a bold variation of beef stroganoff. The yogurt replaces the sour cream but this is not such a violation of the original recipe as some commentators imagine. Yoghurt is just as sour but with fewer calories so the effect is similar. The addition of the pickled mix to the main dish is certainly unusual but there's a method to this madness. Onions are a classic stroganoff ingredient and pickled cucumber was often served as accompaniment to the dish, so mixing them all up works well. One thing should have been mentioned though: It's important to take the pan off the heat when adding the yoghurt ( or sour cream) as it will curdle otherwise. The taste would still be fine but it wouldn't look good.
Jamie, i love you! We eat gourmet dinner on week days thanks to your 15 min recepies. And you have "woken up" cooking interest in my 13 year old son. Thank you sooo much. 😀🌹🌹🌹
This is just an unbelievably good recipe. I have used it 2-3 times in the restaurant I work in and I tell ya, it's always very popular! The pickles are making it that much better! Gotta give it a try! Just for the extra kick I usually throw in a pinch of pickled red chili as well!! Cheers for this recipe Jamie!
I used to make this with sour cream and without adding pickles! And then I made Jamie's recipe yesterday and turned out so tasty. I got so many compliments from friends hehe. Thanks a lot! Jamie is a genius!
I think we should all start doing that: taking names from your traditional recipes and just making it however we want: I love this fish and chips! I made it with baked fish and fried plantains! You won't believe how good fish and chips is just try this.
joseph ugiomoh he said it isn't it just burns the alcohol faster. you can use one of those long lighters to set it off, or just a match if you think you're quick enough :)
i don't know guys, look at this video of jamie... it's refreshing, soo sunday, fresh, bright.. makes me feel like when i was a kid, eating up my breakfast and go to school
funny thing that I have discovered the existence of Jamie about 7 years ago when I had a cheapest and weirdest TV package in the world and there was a channel that streamed only Jamie’s shows and some criminal dramas.
Not sure it can be classified as "stroganoff", but I can taste and smell it from here and I long for the day where I can finally feel the joy of its embrace.
Amazing really, cooked this today, it's one of those dishes, cook it twice then it's second hart, no need for the menu or ingredients. Simply brilliant, thanks J.O.
I tried making this today. Don't add the yogurt until you've turned off the heat and cooled everything for a bit. Otherwise the yogurt will curdle and ruin the whole dish!
Looks interesting, but it's not Beef Stroganoff. Beef Stroganoff is a classic russian dish (since 19th century) and although it have some variations, this doesn't look much like it. To understand my reaction to this, imagine some English classic recipie, e.g. shepherd's pie and make it with rice instead of potato and without meat. Would it be tasty? It could be. Would it be shepherd pie? Nah, it wouldn't.
The side dish is not something that defines the actual dish. This recipe is unusual but it does observe the main idea of stroganoff - a good cut of beef fried in strips, then warmed through in some kind of dairy-based sauce.
Fab Recipe & twist on that classic recipe ....loving the yogurt addition and of course please than the splash of brandy still there ... #Yum !!! LOL Eric xxx
+TheSwampHumanoid Yep i attempted with yoghurt and ruined the dish. Perhaps he only mixes it through a short while just before the end of cooking? Anyway traditional Strag' uses sour cream if that helps
+TheSwampHumanoid original recipe does not use yughurt... it uses russian smetana, which a thick sour cream. a spoonfull is placed on top at the end. although this is a travesty for all stroganoff lovers, it looks like a very nice quick recipe.
+TheSwampHumanoid if you live in the US you'd want to use a product like stony fields whole milk yogurt, it should be able to handle some heat without getting ruined, like the necroalchemeist said yogurt is an essential ingredient in many indian dishes and is even used as a marinade for tandoori chicken which is cooked at very high temperatures, you want more of a creamy yogurt than something lumpy like greek yogurt
i was in trouble with how to deal pickle vinegar of gherkin coz its tasty so i wanted to use for a dish properly...this video has changed my life! Arigato Jamie! from Tokyo!
I can't speak for my girlfriend of course... But in my personal experience, women have a tendency to be very forgiving when you cook them delicious food. :)
I've made this twice now but I don't like pickles so I left them out. Both times the result tasted very bland. I then added a little mustard and suddenly the whole dish came alive. Maybe useful if someone else runs into that problem so I'll just leave this here.
the original recipe doesn't use onions, nor pickles nor even mushrooms. It uses sour cream and mustard. you came to the russian recipe all by yourself. congrats :)
Actually the original recepie does use onions... You don't need the pickles tbough. The point is, the roasted meat needs to be in a a SOUR milk. Jamie used plain yoghurt. That's why he needed to add the pickles for the sourness. Just use sour cream if you don't like pockles and you're good to go, as i original recepie
Jamie Oliver is by far my favorite chef EVER I bought his dvd set Food Escapes and LOVE it all over again. I didn't realize he had youtube. Always captivated watching him with such passion, awareness of the beauty from simple ingredients and just flows with it in cooking. So much fun watching him cook! Looks absolutely delicious whatever this is but this isn't Beef Stroganoff... Beef Stroganoff is made with noodles, *sour cream*, mushrooms, and beef stock.. It doesn't have pickles, red onion, sweet paprika, yogurt, OR rice in it.. Why butcher a classic..?
Eat with noodle, i think that what Pockit is trying to say. Jamie’s interpretation looks like an Indian dish with all the sour ingredients and rice 😂. It is really far from being a Beef Stroganoff.
Love this take on a classic. I make it the trad way and am usually wrecked it takes so long.. Hours. Your way is definitely one to try. Love your TV 15 min meal programme s.
Niesha B , I gotta agree with you on this one dude. Rice and Pickles? What the hell man. I'm not apposed to trying variations on a familiar dish, but for me, the pickle and rice ain't cutting it.
Niesha B Sure, it probably isn´t. Still turned out to be really good. There are many cooks on the net and in eateries, mind the word, making all types of dishes, and it´s hard to find two stroganoffs made the same way, as it is hard to find many dishes at all for that matter, made according to the rule. That really makes cuisine any the more interesting!! Eat up everyone!

Quite a free interpretation of the Beef Stroganoff
A bit of a fresh take on what can otherwise be quite a heavy meal.

Lol fast and furious beef strogonoff lol wonder how different it would be with Brandy instead of white wine
Yes I've noticed a considerable difference to my cornflakes in the morning when replacing milk for brandy

I can imagine the perfectionists up in arms with the way this dish was cooked. Jamie takes everything to another level. Will try this version.

tried it. it rocked. Cheers
It was so sour!!!!
Wrong pickles?
For me
I need to cry it out. Good looking beef dish. I have to try it. Thank you Sir Jamie.
I'd totally make this dish for a date. The flames are flamboyant and the dish looks absolutely bangin'.
Watch out for smoke detectors around your kitchen. It takes the drive away really quick if they go off.
...trust me.
Indeed. My place doesn't have them though. I've always been a bit of a pyro and they always get in the way. :)
this is like the 60th time that i see this and it keeps my mouth watering like a waterfall... please give me some stroganoff Oliver!!!
lovely dish and I will do different recipe... looks delish

When I added the Yogurt the mixture split, I appreciate this can sometimes happen but any tips on how to avoid??
Take a bit of the sauce and mix it in the yogurt before putting it in.
Same happend to me
Add the milk in first to cool down the sauce then temperature the yogurt to be extra safe
your passion for cooking inspires me greatly to cook epic meals all the time
This looks great, I think I'm going to try this...

Different chefs, different styles, I have my own version of beef stroganoff
You have always been one of my favorite chef's.... Been watching you cook for yrs I will make this over the weekend :)
Yeap, it has finally come to a point where Jamie's way of cooking is so messy that it got to me.
Pickles with beef are an unreal combo...can't wait to try this
why yoghurt/milk and not soured cream?
probably because yorghurt is healthier
And tastes way better.
you can substitute semen if you don't have yogurt
Jacques King
Well, thanks for that, I'll keep it in mind if I do find myself without either, after all I can make my own.
Indeed?
Gotta try this soon... looks so easy and delicious...
Im a poor student. What meat can I use for this recipe, other than sirloin?

Yogurt has a tendency to get very sour when heated and that can ruin the whole dish.
How do I avoid that? Is there a trick to it?
