How to make Plantain Tarts

  • INGREDIENTS:
    1 box puff pastry thawed in the fridge according to package(the one I used was 397 grams)
    water
    pinch of salt
    3 ripe plantains
    1 cinnamon stick
    1/4 cup granulated sugar
    1 tbsp butter
    1 tbsp lemon juice
    1/4 tsp nutmeg
    2 tsps vanilla
    1 or 2 drops almond essence
    Recipe Info.
    1. The puff pastry will always be in the frozen section of the supermarket. Sometimes in the icecream freezer.
    2. If you can't find puff pastry you may use shortcrust pastry. It is done the same way I do my Fried Dumpling dough. Rub the pieces of fat into the salted flour and mix in water then knead. Rest and roll out the same way.
    Easy shortcrust is:
    2 cups flour
    1 stick unsalted butter cut in tiny pieces or 1/2 cup shortening
    Add enough cold water to form a smooth and not sticky dough.
    Roll out and use.

    This reminds me so much of my cousin she used to make it for a harvest at church and whenever time I visit home I always have her make them for me to take back with me thank you so much for sharing this recipe with us

    Plantain tart was a staple in my home growing up during the Christmas holidays. Haven’t had it years! My mom stopped baking as she grew older and when she passed away, I thought for sure that I would likely never have any tarts (or her other dishes) close to hers. You know they never wrote down anything. I can’t thank you enough for posting this recipe. I followed your recipe to the letter (making my own short crust) and I was pleasantly surprised ☺️. I should mention I’ve NEVER been one to like the kitchen, so this recipe is so simple even I could follow it. Thank you again, Jerene!!!

    FINALLY managed to find frozen puff pastry where I am. I made this before and did my own puff pastry and while it tasted good, I don't think I got it as nice as I could. So I'm going to try it again!

    Anything boiled tastes diluted. Steaming --suspended above boiling water--would preserve the taste more.

    It would be helpful if you show us how to make the "puff pastry" since some of us are into flaky like you. I guess you bought it ready made.

      1. Puff Pastry is a bit time consuming to make. The focus of the video is more about putting the tart together. Perhaps I can do a puff pastry video in the future.
      2. As mentioned in the video, I had puff pastry on hand already so why bother to make it.
      3. As mentioned in the video I prefer a flaky crust which is achieved by using either puff pastry or flaky pastry. Again, I had puff pasty on hand so why make flaky pastry. Both are flaky in texture.

    So tell us what you adding to the plantains no miss and this no help because is ready made crust you a use omg is the crust recipe me need miss from scratch ellrrr

      Hello Michelle,
      1. The ingredients are indicated on the bottom of the screen during the video. They are also listed in the description box
      2. Real Puff pastry usually has 100s of layers. As a busy mom it would be very difficult for me to spend time making such a pastry elllrrr. Because puff pastry can be very time consuming to make many home cooks tend to purchase it rather than make it all the time.
      3. Shortcrust pastry is actually more commonly used and so I left some details on that in the description box. I just prefer Puff Pastry.
