Want a change from plain white rice, give this a try.
Ingredients
2&1/2 cups of parboiled rice
1- 10 oz. package of frozen spinach
1- 13 oz can of coconut milk
1 tablespoon minced garlic
1 tablespoon of olive oil
1/2 teaspoon salt, onion & garlic powders
1/4 tsp black pepper
If you like spinach you will like this, if it's not familiar to you, why not try something new.😉
This is an important side dish for all vegetarian and vegans. Thanks for sharing
Why not a main dish?
Never used par boiled nothing so I'll just figure out how to do it with regular rice.Sure looks like something we like eating around here,thanks!
You can use regular long grain rice just wash it before, it will be fine. Thnx

Why coconut milk?
@Lawrencewife777, coconut milk is rich and it gives the spinach a nice flavor. Hope u like it.
