In Spain, we can find Buche de Noel as well, we called it "Tronco de Navidad". But we make "Roscon de Navidad" for the 6th of January. This day " Los Reyes Magos"The three wise men" bring presents for all the kids. That morning we used to eat a piece of this cake. XX.

just a few of my tips is 1. I know this may sound really weird, but underbake the sponge a bit may make it really easy to roll, maybe just take them out 1-2 minute earlier 2. have a bit of the meringue on 4 corners of the tray so the parchment paper would stick to the tray so that when piping out the meringue, it would not lift the paper up 3. instead of fondant, a truffle can be used to do the pine cone
I LOVE this kind of projects for yuletide!! so intensive but totally worth it! it just doesn't feel like yule without doing something time consuming!! :D

We made this one year in French class at school. We did it with ganache icing with fork lines through it though and we also cut a piece off the end to stick on the side to make it look more like a log.
Awe how fun! The first time I made this was 30 years ago in French class too! Ha! I made it with my sister, who was also in the class, it was a complete disaster! So much so we called it the "Buche de NO-BLAH!" ha! Funny what a few years of perfecting it can do. I'll have to send her this video so she can see how far we've come ha! Hope you enjoy!

Ok. Mushrooms and pine cones are done! Awesome (even though my pine cones sort of resemble porcupines!) 😂. I do have another question for you. 😬I’ve made jelly roll cakes in the past, and the recipes typically say to get that cake out onto the prepared towel and roll within 10 minutes of coming from oven. The technique here is to completely cool and then roll in damp towel. Wondering if it’s this specific cake recipe that makes the difference in technique? Thanks again for your help if you’re able to see this and respond at such a busy time of year! Love your channel! 🎄
Personally, I have had greater success with the cake being cooled since it's more fragile when it's warm and more likely to crack :) It could be because this recipe has so many egg whites in it that this makes a difference? And don't worry about the porcupines! They belong in the forest too ha! :)

For the pine cones, I like to mix equal parts shredded coconut, digestive cookies, add table spoon of cocoa powder and some condensed milk. It takes really good and u can decorate it with almonds :)

Awe you are too kind :) thanks for your sweet note :) To answer your question I think diplomat cream is a bit lighter than pastry cream or Crème Pâtissière as it's known in France. But I'm sure diplomat cream would be lovely in this too :) Hope you enjoy!

What a hit, Made this for Today though I took 2 days, versus 3. I opted to frost it as my cake cracked a bit, but was totally able to save it. Would def. make again, but need to up my game for next year!

What a hit, Made this for Today though I took 2 days, versus 3. I opted to frost it as my cake cracked a bit, but was totally able to save it. Would def. make again, but need to up my game for next year!
