Hello there! For this video I challenged myself to come up with a fun tasty oatmeal idea, everyday, for a week straight. Turned out pretty good I’d say. Hope you enjoy these cozy porridge recipes ✨

✨Ingredients✨
#1 Pumpkin Spice Latte Oats
for the pumpkin puree:
½ medium sized hokkaido pumpkin, cut into chunks
for the porridge:
½ cup quick cooking oats (45g)
a pinch of salt
⅓ tsp cinnamon
⅛ tsp nutmeg
a dash of each: cloves, dried ginger, cardamom
a few drops of vanilla aroma, or 1/2 tsp vanilla extract
2 tsp ground flax seeds
2 heaping tbsp pumpkin puree
2 tsp maple syrup
⅓ cup coffee (80ml)
⅔ cup non dairy milk (160ml)
→ or adjust the coffee/milk ratio to your liking!
serve w thick vegan yogurt + cinnamon + more sweetener if needed
→ serves 1
#2 Apricot & Sesame Oats
½ cup quick cooking oats (45g)
a pinch of salt
2 tsp sesame seeds
1 tsp vegan butter
1 cup non dairy milk (250ml)
a handful of apricots, fresh or dried
for the syrup:
1 tbsp white tahini
2 tsp maple syrup
pinch of salt
1 tsp non dairy milk (more if needed)
more sesame seeds for the top
→ serves 1
#3 “Tiramisu” Oats
½ cup quick cooking oats (45g)
a pinch of salt
a few drops of vanilla aroma, or 1/2 tsp vanilla extract
2 tsp maple syrup
2 tsp ground flax seeds
½ cup coffee (125ml)
1/2 cup non dairy milk (125ml)
⅔ cup plain soy yogurt or vanilla soy
if needed: 1-2 tsp maple syrup, ¼ tsp vanilla
→ combine yogurt, sweetener and vanilla first in a separate bowl, then create the oatmeal/yogurt layers in a little jar or glass
a dusting of unsweetened cocoa powder for the top
→ serves 1
#4 Savory Veggie Porridge with Tasty Chickpea Topping
for the chickpeas:
1 can drained chickpeas (240g)
1 tbsp olive oil or a drizzle
1 tbsp nutritional yeast
seasonings to taste for example:
¼ tsp chili flakes
¼ tsp garlic powder
¼ tsp turmeric
a generous pinch of salt
for the oats:
1 cup quick cooking oats (90g)
2 cups vegetable broth (500ml)
1 ½ tbsp nutritional yeast
an additional pinch of salt, or to taste
¼ tsp chili flakes, or to taste
2 tsp white wine vinegar
for the veggies:
1-2 onions
1 zucchini
1 tbsp olive oil
3-4 handfuls of fresh spinach
salt, pepper to taste
→ serves 2
#5 Five Minute Berry Oats
½ cup quick oats (45g)
2 tsp chia seeds
pinch of salt
1-2 handfuls of dried strawberries
hot water, enough to just cover the oats
2 tsp maple syrup
serve w vegan yogurt or vegan cream cheese
#6 Spiced Quick Rice Porridge
½ cup rice flakes (50g)
¼ tsp salt
¼ tsp dried ginger
¼ tsp cinnamon
1 tsp vanilla
¾ cup + 2 tbsp non dairy milk (200ml)
topped with apple pear sauce, raspberries, a drizzle of peanut butter ...
#7 Autumn-y Pancake Oats with plum sauce
for the plum sauce:
250g plums = 8.8 oz
100ml orange juice = ⅓ cup + 2 tbsp
⅓ tsp cinnamon
2 tsp maple syrup (optional)
for the oats:
½ cup quick oats (45g)
¾ tbsp unsweetened cocoa powder
pinch of salt
pinch of cinnamon
hot water, enough to just cover the oats
if needed: 1-2 tsp sweetener
for the mini pancakes:
¼ cup non dairy milk (60ml)
2 tbsp apple sauce
½ tsp vanilla
1 tsp apple cider vinegar
¼ cup + 1 tbsp flour (45g)
1 tbsp vanilla protein powder
½ tbsp sugar (add another ½ tbsp if your protein powder isn’t sweet)
1 tsp baking powder
a pinch of salt
1-2 tsp coconut oil for the pan
also coconut yogurt
→ serves 1-2
