That's because Vincent said that he was going to kill Robert like a dog so Robert ended up showing him who was actually the dog and who was the master. It was very poetic, powerful and profound ending scene.

Throughout the movie there's a common theme: he leaves a trail of brutal kills for the antagonist to discover before he eventually kills them. Poetic in a way, instilling fear in those who uses it to oppress

I enjoyed the symbolism here at the end. He says we all have to face death eventually. Instead of facing him after cutting his bonds he ran as McCall followed him like Death, waiting patiently till the end. "A coward dies a thousand times before his death, but the valiant taste of death but once. It seems to me most strange that men should fear, seeing that death, a necessary end, will come when it will come." ― William Shakespeare, Julius Caesar
Proving that even in death Vincent was a coward.

Denzel's character here is so well done in these movies. He's stoic and thoughtful and loves life and beautiful people, but also has a dark side where he plays with his food. Really shows the duality of human nature and how someone who might be your worst nightmare is a damn teddy bear for someone else, very true to life.
