Are there any veggies that I could add like mushrooms or Spinach? What else could I serve to accompany this, like fish, meatballs, sausage (kofte), caprese salad, other salad? Could I top with Fresh Mozzarella hand torn pieces too? I think you said that I could use a Pesto sauce too. I think that would be cool too. Love your channel. You are amazing!!! This does sound very good to me. I'm not a big gnocchi fan it just too doughy for me but I think the ricotta would add a little different texture and a deeper flavor. Thank you for the suggestion
I had my ricotta gnocchies today made from the cheese I made yesterday. The cheese was so dry already I had to use 2 eggs. The gnocchies were so soft and sooo goood. They really were super in a thick tomatosauce with half blended soffritto. I like a few chunks of vegetables in the sauce. Then I finished off with a crostata with raspberry jam. I could almost be an Italian today. The Italian food is absolutely the best.

It was the first time I made and taste Ricotta Gnocchi. I was surprised by their delicious softness. I made it with brown butter and a generous amount of sage from my garden. But I took care to infuse the sage well and not fry it, using some cooking water.

A question! This is a lovely recipe but I’m finding it hard to restrict the flour ratio to this recipe guideline and it not be really sticky when kneading. Which makes me add more flour steadily, until I think the result is a bit tougher than it should be. Advice? Maybe draining liquid from the ricotta?
I have found 00 flour at Romanelli's in phoenix. Check to see if there is an Italian deli in your area. Walmart sells 00 on line along with amazon and Sprouts. I do not go into AJ's too often so I don't know what they have. If you have a good relationship with a pizza joint in your area you can ask them if they can order 00 from the supplier they use. When I had the Pizzeria in Phx I did sell 00 flour to some customers but never in bulk due to no one wanted that much flour except me. Stay safe and good hunting.

Yes, you can swap out the 00 flour for potato flour in my ricotta gnocchi recipe. Potato flour is a gluten-free flour that is made from dried potatoes. It has a similar texture to all-purpose flour, but it is gluten-free.
I advise you to cook them freshly made, otherwise they could become mushy! Or you can make them a few days before, or the day before and freeze them, and then cook them when you need them!

The ricotta needs to be drained, so that it is not too wet.
