  • Ricotta gnocchi are soft pillows of pasta, which will melt in your mouth. Much faster to make than traditional gnocchi you might surprise yourself with just how good you are at creating these little morsels of joy. There is no compromise when it comes to flavour and they can be served with any of your favourite sauces. I’ve chosen to smother my ricotta gnocchi in tomato and basil sauce - the perfect partner for these cheesy delights.
    Gnocchi are Suzanne’s favourite pasta, and although we all have time on our hands at the moment, they can take a while! Have you ever tried ricotta gnocchi? They are much quicker to make, but still melt in your mouth and my version comes soft and fluffy.

    Love gnocchi but hate making them? Get yourself some ricotta and try this alternative to the traditional potato version. We’re all loving to cook in ISO but it can get tiring, so if you want a new, fast way to make fresh gnocchi try my ricotta version!       About how many people do you think this could serve? I'm doing low carb and love the idea of doing this with ricotta rather than potato. Are there any veggies that I could add like mushrooms or Spinach? What else could I serve to accompany this, like fish, meatballs, sausage (kofte), caprese salad, other salad? Could I top with Fresh Mozzarella hand torn pieces too?
      I think you said that I could use a Pesto sauce too. I think that would be cool too.
      Love your channel. You are amazing!!! I think this will be the first pasta that I make from scratch.

      This does sound very good to me. I'm not a big gnocchi fan it just too doughy for me but I think the ricotta would add a little different texture and a deeper flavor. Thank you for the suggestion

    It was the first time I made and taste Ricotta Gnocchi. I was surprised by their delicious softness. I made it with brown butter and a generous amount of sage from my garden. But I took care to infuse the sage well and not fry it, using some cooking water.

    I had my ricotta gnocchies today made from the cheese I made yesterday. The cheese was so dry already I had to use 2 eggs. The gnocchies were so soft and sooo goood. They really were super in a thick tomatosauce with half blended soffritto. I like a few chunks of vegetables in the sauce. Then I finished off with a crostata with raspberry jam. I could almost be an Italian today. The Italian food is absolutely the best.

      @@vincenzosplate I used a little more flour and a little more butter than in your recipe, and I used vanilla powder like you have. I see quite a few use lemon zest. Maybe I'll try that next time.

    I have always made potato Gnocchi but have had ricotta gnocchi and enjoyed their lightness compared to the potato version. Thx for the recipe and for showing how easy they are to make. I will be making them soon.

    Vincenzo is it possible to roll these gnocchi over a fork or a gnocchi board in order to form a cavity, or are they too delicate for that?

    I am trying to make this right now like someone mentioned in the comments Vincenzos ricotta has to be different my dough is like mud you can't even knead it and I already used a little more flour. . 😬

    A question! This is a lovely recipe but I’m finding it hard to restrict the flour ratio to this recipe guideline and it not be really sticky when kneading. Which makes me add more flour steadily, until I think the result is a bit tougher than it should be. Advice? Maybe draining liquid from the ricotta?

      Yes, you can swap out the 00 flour for potato flour in my ricotta gnocchi recipe. Potato flour is a gluten-free flour that is made from dried potatoes. It has a similar texture to all-purpose flour, but it is gluten-free.

      I advise you to cook them freshly made, otherwise they could become mushy!
      Or you can make them a few days before, or the day before and freeze them, and then cook them when you need them!

    In the US stores don't sell 00 flour. We only have all purpose flour. Is that ok? Or is it going to turn out bad?

      I have found 00 flour at Romanelli's in phoenix. Check to see if there is an Italian deli in your area.
      Walmart sells 00 on line along with amazon and Sprouts.
      I do not go into AJ's too often so I don't know what they have.
      If you have a good relationship with a pizza joint in your area you can ask them if they can order 00 from the supplier they use.
      When I had the Pizzeria in Phx I did sell 00 flour to some customers but never in bulk due to no one wanted that much flour except me.

      @@tbac2432 I've checked Walmart and found nothing on their website. I don't know what AJ's is, and we aren't special enough to have stores like Sprouts. My area in Central NY State is very neglected by large businesses. They pass us over and have for decades. Shoot, we can't even get a Sonic or Chick-fil-A. It's not that there are no people, we just get overlooked. Anyway, Amazon is overpriced for it because people buy it at the stores you're talking about then price gauge the crap out of it, so I'll stick with the all purpose flour unfortunately. Thanks though.

    I really wish you would make more videos like this that are more like tutorials and teaching related and less videos about criticizing how other people do things without even trying their methods just because it's not your way or "traditional Italian " you show way too much hate towards other, especially Americans.
