    Ingredients (材料):
    450g (3 1/3cups) bread flour (面包粉)
    50g (3/8 cup) plain flour (普通面粉)
    2 1/2tsp instant yeast (即溶酵母)
    75g (1/3 cup) caster sugar (细砂糖)
    1 tsp salt (盐)
    1 tbsp instant coffee powder (即溶咖啡粉)
    2 tbsp hot water (热水)
    1/2 tsp coffee essence (咖啡香精)
    1 egg slightly beaten (1粒蛋打散)
    120ml water (水)
    120ml milk (牛奶)
    50g butter (牛油)
    90g toasted walnuts, chopped (烘香核桃,切碎)
    60g (1/2 cup) raisins (葡萄干)
    For glazing :
    1 egg (鸡蛋)
    1/8 tsp salt (盐)
    Some white and black sesame seeds
    适量黑白芝麻

    Approximately how long does it takes for the dough to turn smooth and elastic? I tried before but dough seems to be still quite sticky after almost 25-30 mins of mixing?

    Look delicious. If I want to make half of the recipe, , does that means that all the ingredients should be reduced into half?

      I always use hand. But if we use our hand. Need extra strength 😁😁

    I would you to know the difference between bread flour and plain flour.

      Simply bread flour has more gluten forming proteins and gives the mixture more elasticity than cake flour. That's why bread dough forms a ball when kneaded and cake batters are more liquid.
