Squash Casserole - Cheesy Traditional Recipe

    Cheesy Traditional Squash Casserole
    6 tablespoon butter (divided)
    5 medium yellow squash, sliced ¼-inch thick (about 7 cups)
    1 medium yellow onion, chopped
    Salt, to taste
    Pepper, to taste
    2 eggs
    ½ cup mayonnaise
    ½ cup milk
    1 cup shredded cheddar cheese
    1 cup shredded mozzarella cheese
    1 sleeve Saltine crackers, crumbled
    ½ cup grated Parmesan cheese
    Melt 3 tablespoons of butter in a large skillet over medium-high. Add the squash and onion. Season lightly with the salt and pepper. Cook until the squash is tender, about 10 minutes, stirring occasionally. Cover with a lid for a faster cooking time.
    Remove from the heat and drain the squash and onion well using a colander, for a few minutes.
    Meanwhile, in a bowl whisk together the eggs, mayonnaise, milk, and cheeses.
    Lightly stir the squash mixture and wet mixture together. Scrape into a 12-inch buttered Dutch oven or 9 x 13-inch casserole dish.
    Sprinkle the top with the crumbled crackers followed by the Parmesan cheese. Evenly pour the remaining 3 tablespoons of butter (melted) on on top.
    Bake until the casserole sets up and is lightly browned on top. For inside baking: 350 degrees F for about 25 minutes. Serve warm.
    Tip: if you using Ritz crackers for the topping, use about 2 sleeves.

    Cutting kitchen tile til 9pm, outside underneath the shade of a red oak for most of today, high 112°F in Hill County and this piping hot casserole STILL sounds fantastic. We were giving away yeller squersh a month ago, now down to the last one on the vine. May have to make a Brookshire Bros run in the morning so we can make this magical dish for supper tomorrow night. Thank you sir for all you and your bride do, keeping us all handy around the fire and keeping our bellies full of the good stuff.

    Just harvested a bunch of squash from my garden and I love me a good squash casserole. I just used your recipe tonight for the first time and I am kicking myself for not trying it sooner. This is the best squash casserole I've ever eaten.

    You're right about the old recipes being so much BETTER TASTING... BETTER MEMORIES...BETTER FOR YOU.
    My dad used to fix this recipe, but he used to mix Stove-Top Stuffing Mix in it...it was so good!!!
    My dad died New Years Eve 2 1/2 yrs ago & watching this reminded me of him so much...THANK YOU!!!

    Well, between what we are a groin' and what the ladies will bring to church on Sunday's, I think we will have a few rounds of this dish in mid August and September (that's when our squash in the high country comes on)!     I've heard the gov of oklahoma named you cowboy cook of the state, I ain't no gov but I'd name you kent cowboy cook of every state and country for that matter, thank you for your pure goodness and sharing your heart in a great way, kent you are a living testimony to a great way of life, I as well cook in a 1900 kitchen, raised that way as well, drawing water from a well and bucket , bedpans wood burner, no electric till I was 11 thought I was the richest kid in the world, still do, in the heart.     You know how to cook and eat cowboy. That's my recipe too except I do use Ritz crackers. Now I got to go hit my neighbor's garden. He brought us some homegrown tomatoes last week. I am blessed! Thanks and God bless!

    I too from Okrahoma, and a very similar has been passed down - we start by frying shredded hash browns in the skillet, and after browning them good and flattening, we pour the mixture onto them (but using a dozen eggs, lots more cheese and spices), cover with crushed ritz or saltine, cover with more shred cheese, and bake until the cheese has a crust. Cuts out like a cake. Gramma always called it Stillwater Squash

    I grew up with this exact dish, but Momma used crumbled cornbread on top instead of saltines. Later, I added diced peppered bacon to the cornbread...... just because I could ! THX, Kent. Lotsa memories here. God Bless.

    During peak squash growing season you need to patrol the garden about once every hour to keep them from growing to the size of baseball bats. I don't know how many times I've visited the garden and found a squash or a zucchini the size of a small log. I finally found that harvesting the smaller squash before they reached their full potential gives you a veggie with a delicious nutty flavor. I would really like to try your recipe with yellow crookneck or straight neck or even zucchini squash that was not more than two inches in diameter. I won't elaborate now but there's some Vietnamese squashes that would work marvelously with your recipe as well.

    Love what you do. You have helped me a lot with my cast iron. That recipe reminds me of eating at my grand maw's when the crops come of. Best meals ever! Fresh corn, peas, tomatos, cucumber, squash, neck bone, cabbage, and macaroni in neck bone broth mmm that was some kinda eatn.

    I HATE SQUASH, but Kent your Moms recipe for Cheesy Squash Casserole has changed my food palate forever. That's some tasty squash. My wife added (always adding stuff) a can of "Cream of Mushroom Soup & 1/2" diced potatoes, not bad. Several people have requested the recipe and I've given your recipe out to several people.     You've inspired me to rent a tiller (I had one for years, then sold it) and make a garden next year. There is nothing like home-grown tomatoes, squash, and zucchini.

    Your timing is perfect. My little garden has a ton of summer squash just about ripe. Its been a good year for squash, not so great for tomatoes. This looks really good and a must try.     Love summer squash. I like to slice it thin, as you've done, slice some onjons, garlic and add to a cleaned whole salmon or trout in a tin foil pouch and poach (add some cherry toms butter and lil white wine if ya wish). Great post and dish, gonna try.

    My favorite in Parmesan cheese in eggplant casserole. My family prefers their squash battered and fried or roasted with other vegetables. Need to try this one and see how it goes.
