Jumbo Siopao para more prosperous this Chinese New Year!

- Homemade asado siopao
1st ingredients;1cup lukewarm water
1 tbsp instant dry yeast- heaping
1 tbsp sugar
13/4 cups all purpose flour
Rest for 15 mins
Add 2nd ingredients;
1 cup water
1 cup sugar
1 tsp salt
1 tsp vinegar
100 gms. Lard
1 tsp baking soda
1 tsp baking powder
3/4 kilo all purpose flour
Mix together until fine and smooth in the mixer for 10 mins at medium speed.rest for 1 hr or until double in size, cover with plastic.
Fillings;pork asado
1/4 cup oil
Minced garlic
1 large minced onion
1 kg of pork kasim( pork shoulder)
3pcs star anise
4 tbsp oyster sause
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup brown sugar
Add 3 cups of water till tender up to 45-60 mins
Add 1/2 cup cornstarch dilluted with 1/2 cup cornstarch. Let it cool and refrigerate for 3-4 hrs till firm.
Cut the dough and weigh up to 70 gms each.
Sauce
3 cups water
1/4 cup soy sauce,
1 cup brown sugar
1/4 cup cassava flour dilluted in 1/2 cup of water, add 1 tbsp oil for glossy look.

I loved siopao since I was a kid. When in Manila, I would go to Mamon Luk in Quiapo just to sample them. Here in NYC I go to Chinatown just to get my favorite ones.
