    1. Mapo Tofu (Beancurd Sichuan Style)
    Ingredients [for 2 servings]
    ・11 oz (320g) Tofu
    ・3.5 oz (100g) Ground meat (pork, chicken, or beef)
    ・1oz (30g) Minced green onion (white part is better)
    ・1-2 tsp Minced garlic
    ・1-2 tsp Minced ginger
    ・1-2 tsp Oil
    ・0.8 cup (200ml) Water
    ・2 tsp Potato starch or Corn starch
    ・4 tsp Water
    Sauce
    ・1 tbsp Doubanjiang (Chinese broad bean chili paste)*
    ・1 tbsp Sake
    ・1 tbsp Sugar
    ・2 tsp Miso paste
    ・2 tsp Soy sauce
    ・1 tsp Chicken stock powder or Other type of stock powder (cube)
    ・1 tsp Oyster sauce
    *Doubanjiang substitute: 1 tbsp Miso paste + 1/2 tsp Soy suace + 1 tsp Cayenne pepper powder
    Topping
    ・Minced green onion

    2. Tofu Hamburger Steak
    Ingredients [for 2 servings]
    ・4.6 oz (130g) Tofu
    ・3.5 oz (100g) Ground meat (pork, chicken, or beef)
    ・1.7 oz (50g) Onion
    ・1/2 Egg
    ・1 tbsp Potato starch or Flour
    ・1 tsp Miso paste or Soy sauce
    ・Salt and pepper
    Ponzu sauce*
    ・1.5 tbsp Soy sauce
    ・1 tbsp Rice vinegar
    ・1/2 tbsp Lemon juice
    *You can just use soy sauce instead of ponzu sauce.
    Topping
    ・Fried egg
    ・Grated daikon
    ・2-3 sheets of Shiso leaves

    Great recipes with tofu. As always simple and well explained. My fav is the niku tofu. In my book an Okinawan champuru should contain goya, bitter melon/gourd, it gives that extra kick. SPAM is fine. A nice dish with tofu I make is a starter: fill bitter Belgian endives leaves with silken, creamy tofu mixed with a little good quality olive oil and salt, season lightly with white pepper, top with chopped chives or green spring onion. Very quick and simple, no cooking. Arigato for the vids and all answers to everyones comments, they add info!

    Despite the fact that I am not very good with very spicy things Mapodofu still seems to be very good whenever I see it.
    Tofu is sadly a little bit hard to find here but I'll ask my boyfriend to find some next time. :)

    Can you please tell me which kind of tofu you have used for deep frying tofu. Can you show me the label which you bought in Japan

      I buy 木綿豆腐 Momen-tofu (firm tofu) for deep frying tofu. Any brand is fine!

    If you like it extra spicy try the Sichuan version which includes 2tbsp of Sichuan pepper corns. I also like to add cabbage or zucchini :)

    What kind of tofu are you using for the Nuggets? I never know which one to choose soft, firm extra firm, the one that comes in a carton (not on the fridge section)?... so many options!

      Thanks for your question.
      I use firm tofu. I don't know how hard your firm tofu is, but you can probably use it. Maybe even soft tofu will work. In any case, it is better to use tofu that has no water content, so it is better to drain the water or use tofu with less water content.
