    1. Croquette (Fried Mashed Potato)
    Ingredients [for 2 servings]
    ・7 oz (200g) Potato
    ・3.5 oz (100g) Ground pork
    ・1.7 oz (50g) Onion
    ・1 tsp Butter
    ・A pinch of Salt
    ・1/2 tsp Black pepper
    ・2 tsp Sake
    ・2 tsp Soy sauce
    ・2 tsp Sugar
    ・1 tbsp Flour
    ・3 tbsp Beaten egg
    ・6 tbsp Panko (Bread crumbs)
    ・Oil for deep-frying

    2. Japanese Potato Salad
    Ingredients [for 2 servings]
    ・5.3 oz (150g) Potato
    ・1 oz (30g) Onion
    ・1 oz (30g) Bacon
    ・2 Eggs (1 is hard boiled / 1 is soft boiled)
    ・2-3 tbsp Mayonnaise
    ・1/2 tsp Soy sauce
    ・Salt and pepper
    ・Oil for deep-frying

    3. Potato Tempura
    Ingredients [for 2 servings]
    5.3 oz (150g) Potato
    Tempura batter
    ・2.5 oz (70g) Flour
    ・0.4 cup (100ml) Cold water
    ・Half of egg
    ・A pinch of Salt
    ・Aonori (Dried green seaweed)
    ・Oil for deep-frying

    4. Cod Roe Potato Stacks
    Ingredients [for 1-2 servings]
    ・2.8 oz (80g) Potato
    ・1 oz (30g) Spicy cod roe
    ・1 tbsp Mayonnaise
    ・1 tsp Olive oil
    ・Aonori (Dried green seaweed)

    5. Braised Meat and Potatoes (Niku-jaga)
    Ingredients [for 2 servings]
    ・7 oz (200g) Potato
    ・7 oz (200g) Thinly sliced beef & pork
    ・3.5 oz (100g) Onion
    ・2 oz (60g) Carrot
    ・1.25 cups (300ml) Water
    ・3 tbsp Sake
    ・3 tbsp Soy sauce
    ・2 tbsp Sugar
    ・1 tbsp Mirin
    Topping
    ・Snow peas

    6. Crispy Potato Gyoza (Dumpling)
    Ingredients [for 2 servings]
    ・Gyoza wrappers
    ・2.8 oz (80g) Potato
    ・0.5 oz (15g) Onion
    ・0.5 oz (15g) Bacon

    ・1/2 tsp Stock powder (cube)
    ・Salt and pepper
    ・1 tbsp Corn
    ・Shredded cheese

    Great recipes! I am originally from Sweden so I love potatoes. Will definitively do the potato salad, (already do a good niku-jaga). A tip for the mentaiko - cod roe: ask in the shop for broken ones, they are half the price or less. But sadly no mentaiko here in Romania. I loved dishes made with mountain potato - yams - nagaimo in Japan. Especially gratin. Maybe you can make a clip with dishes made of this one day? Arigato!

      @@JapaneseCookingChannel I don´t know if you can buy cheap broken mentaiko outside of Fukuoka or Kyushu, but it is a good idea if you are going to eat it at home or cook the same evening. Normally whole mentaiko is for gifts. Yes, any nagaimo clips are welcome! Arigato!

    Hi!!! I love your channel. I was wondering a couple of things. Do you use dark soy sauce? And what sake do you recommend? For some of your recipes I use white pepper for a slight kick. Keep the recipes coming.😊

      My soy sauce in this video seems to have a slightly lighter color because it is not fire-roasted during the manufacturing process. These type is called "raw soy sauce" in Japan. I buy it because I can taste the fresh aroma and flavor of fresh soy sauce.
      I sometimes use normal soy sauce which is not "raw", and I think these normal soy sauce is called "dark soy sauce"...? I'm not sure if dark soy sauce in Japan is the same as the one in overseas.
      Anyway, you can use any type of soy sauce for my recipe!!
      About the sake, I like to use "drinking sake" because I think it gives more umami to the dish than cooking sake. But, you can also use cooking sake. It's not problem at all! Use whichever is easier to obtain 😊

      I like to use white sesame oil for deep-frying. I also like to use black sesame oil and olive oil for stir-frying.

    The gyoza is Brazilian Style gyoza. we call it Pastel :)

      You can use white wine, or just skip sake :D I think the taste is fine without the sake.

      I use white sesame oil for frying. I think most of Japanese people use normal salad oil. But, white sesame oil makes fried foods extremely tasty!! (Also used in authentic tempura restaurants in Japan.)

      Yes, it is better to use a pot when there is a lot to boil.
      Using a microwave is said to heat the vegetables in a shorter time, so the nutrients in the vegetables are more likely to remain without being broken down. Water-soluble vitamins also seem to remain.

    Too much pepper in the first dish. For my tastes. Other probably enjoy it.
