It would be useful to know when scaling up/down the recipe. Could you also share the depth of the smaller tartlet rings you use in your other videos. Also, your tart shells look absolutely perfect. Is there anything you do to tidy them up e.g smooth the edges with a fine micro plane?
to get it more crispy, maybe you could add a little cacao butter like (Barry-Chocolate Micryo) over the tart when it a little warn before it cooldown ?
