Thank you Kent and Shannon for another awesome video! It almost brought tears of happy nostalgia! Long story short, when my ex and I split she got the apartment and I moved onto my sailboat. My parents came to visit for Thanksgiving and all I had to cook on was my little diesel stove. So, instead of a huge turkey, I made cornish game hens! One at a time in my little cast iron pot/skillet using almost your same recipe! Complete with the bacon wrapping! I wish I had known the butter inside trick though!! And, also it took about 45 mins for each one, so my turkey dinner was more like an evening of cornish game munchies... Anyway, I hope you guys are having an awesome new start to the year!
Made some of these little yard birds this afternoon. Followed Kent's guidance except I put the dutch oven in our kitchen oven (it was too hot outside for a fire) and threw some mushrooms in my gravy. Served everything over a bed of wild rice. Kent's Red River Ranch seasoning with olive oil, bacon, butter, lemon and chicken broth made the prep quick and easy. Thanks again for herding us in the right direction Kent.

Made these again for Saturday dinner. Problem: This makes a lot of food. I baked two hens for the wife and I which was more than we could eat. The leftover hen want back into the gravy and was served over buttered egg noddles for dinner tonight. Delicious!! I think it was better as leftovers. Well done partner, this is a keeper recipe. I'm making this for Sunday dinner this weekend! The chicken aerobics part was funny. I love all the outdoor cooking pages. Especially Cowboy Kent's page and Townsend's page. They virtually transport you back in time with their videos. Educational at the same time.
Tonight I felt like game Henson. Adopted your recipe for over and pretty much followed your procedures. It never did lose any of its fluid. When cooked I removed the hen's, then strained the fluid into sauce pan. I had no corn starch so I used Wondra. I can never bring myself li f to use anything out of a can. I added a half pound of fresh b it from mushrooms to the fluid. Heated through fluid, added the Wondra, and let it thicken. Lastly, I added the heavy cream, reheated it to near boil and served. I never once tasted the dish but I wasn't disappointed. The gravy was delicious! The hen feel off the bone and the whole business turned out great. This recipe is very easily adopted to the oven!
You just reminded me, I used to buy live chickens at a city store. I'd pick the one I wanted from the shop window. The storekeeper took it in back, killed it, cleaned it and scalded it. I singed off the pin feathers on my gas stove top. Can't get fresher than that. I can't wait to try these game hens with your gravy! I always use cornstarch for my gravy too. No lumps ever. Biscuits, oh yeah! And turnip greens! Nice to meet you, Shannon! You sure are pretty!

Growing up, my mother used to make my brother/sisters our own cornish game hens for Thanksgiving each year and mine was the only one brushed with bbq sauce..lol....good memories. Wonderful flavor in the little bitty bird

Awesomely delicious Kent I'd try some of your taters and carmelized onions with it. However with the gravy bonus it's a tuff choice between those and a good mashed potato. 👍. Marinated overnight,We Spatchcocked that hen, in pan with broth, garlic a white wine mushrooms and broccoli- previously frozen. Serving with mashed Potatoes and Mac n cheese. Cooking right now,Ten minutes left for cooking time,where we'll add bbq sauce to the skin side of hens.Thank you, chef K.Rollins, for the lemon tip, didn't have fresh so we used bottled lemon juice.

Reminds me of the time I baked up some Cornish game hens for my three daughters, They all squealed,, "EEEWWW it still looks like a bird!" I ate a lot of chicken that night.

Kent, For the first time ever, I made cornish game hens. I used your method. I only made 2, and used a 10” deep DO. Very tasty indeed!!! Oh my gosh...the gravy!!! What was leftover, forget the straw, I drank it right out of the DO YUM!!!! Thanks again!
While Cornish Hen is not my personal preference for a meal and will pass on this dish, I will still tip my hat and compliment you on a job well done. 2 thumbs up!
I have been watching your videos this past year and love you all! I have been shut In with the covid pandemic due to health issues. Our children are grown and gone but I still love to cook. I have used several of your recipes and my husband has loved them! Your channel has really helped me get through the last year. Thank you so much for making me laugh and smile. You don't know how much it means to me. I have to get some of that seasoning! As soon as my husbands business picks back up I'm gonna order me some! We got our vaccines but I am to scared to go out yet so keep up with the videos. Shannon you are a lucky woman! Awesomely delicious Kent I'd try some of your taters and carmelized onions with it. However with the gravy bonus it's a tuff choice between those and a good mashed potato. Thanks to Shannon for the work behind the camera, her giggle when the hens were doing aerobic exercises killed it. 👍. Marinated overnight,We Spatchcocked that hen, in pan with broth, garlic a white wine mushrooms and broccoli- previously frozen. Serving with mashed Potatoes and Mac n cheese. Cooking right now,Ten minutes left for cooking time,where we'll add bbq sauce to the skin side of hens.Thank you, chef K.Rollins, for the lemon tip, didn't have fresh so we used bottled lemon juice.

@@CowboyKentRollins i love to eat them Kent. I like to eat all poultry, but i guess some people might be surprised that turkey is my least favorite, and i don't eat it unless i deep fry it in my deep fryer or smoke it with about 70% hickory and 30% white oak. I do not even care for mesquite wood.

So now, if someone doesnt have one of those fancy dancy dutch ovens and a campfire and coals like you have....could it be baked in the good 'ol oven? What temp would you use and for how long? I am predicting, when I make this we just may founder out on it LOLOLOL. Ohhhhhh Love you guys.
325 covered for about an 50 minutes then remove the cover and baste and cook until golden brown or internal temp is 165

Reminds me of the time I baked up some Cornish game hens for my three daughters, They all squealed,, "EEEWWW it still looks like a bird!" I ate a lot of chicken that night.

For the first time ever, I made cornish game hens. I used your method. I only made 2, and used a 10” deep DO. Very tasty indeed!!! Oh my gosh...the gravy!!! What was leftover, forget the straw, I drank it right out of the DO YUM!!!! Thanks again!

I have been watching your videos this past year and love you all! I have been shut In with the covid pandemic due to health issues. Our children are grown and gone but I still love to cook. I have used several of your recipes and my husband has loved them! Your channel has really helped me get through the last year. Thank you so much for making me laugh and smile. You don't know how much it means to me. I have to get some of that seasoning! As soon as my husbands business picks back up I'm gonna order me some! We got our vaccines but I am to scared to go out yet so keep up with the videos. Shannon you are a lucky woman! I also have a husband who likes to entertain and I thought that God broke the mold when he was made and I was the luckiest woman on earth but there is two of us, lol!
