  • This recipe is super easy and delicious. If you like Mexican Street Corn, then it's a must try.
    INGREDIENTS
    A plethera of fresh corn on the cob (okay not a plethera...4 will do)
    1/2 cup mayo
    1/2 cup Mexican crema
    1 to 2 limes
    Tajin (its a tangy chile salt)
    Tapatio Hot Sauce (or your favorite go to hot sauce)

    Just made this it was so delicious, I agree with mixing the lime juice in the cream. And extra lime...so flavourful 😋

    I like to use leftover corn (not on the cob) from a previous meal to make this. Toss in a pan and cook till slightly charred. Then mix in the mayo/crema and lime. Top with Smoked Paprika and shredded cheese. Serve with homemade tacos de barbacoa.

    when I was in Monterrey Mexico the Street Corn Vendors mix the Hot sauce with the Mayo & Cream all together. He would paint the corn with a brush, then sprinkle Cotija all over it. Everyday he would show up, Ring a Bell he had and the kids would pour out of the houses and RUN to him ! Wow I Thought he was the Ice Cream Man at first!

    Great video! I love street elote. What I do sometimes is boil the corn in salt water, cut it off the ear and then fry it in real butter until charred. Put it in a bowl and add the rest of the ingredients. Thank you again!

    I do mine a little different. I first butter it, then use mayo, then cotija then I sprinkle chili powder & Tajin then a squeeze of lime! So delicious!

    What a Great way to roast corn. This looks amazing, too! All of the food you cook looks good. I've only had this made for me in restaurants. I've never attempted to make it on my own, but with your video, it's now something I will make. Maybe even tomorrow!!

    Excellent ! I agree with you. Roasted corn has the perfect texture. Maybe because the cob isn't soaking up the water? Don't get me wrong, boiled corn is still great. Thanks for the tip on mixing the mayo and crema!

    I know of another way to cook corn without heating house. Cook in microwave. You wrap it up real tight with plastic wrap with husks on. Cook for a couple minutes until you see plastic wrap swelling up. surprisingly it isn't chewy. It basically steams it and it is better than the oven.
    Plus I have been told before that when you boil your corn DO NOT salt water!! It makes your corn tuff and chewy. The salt pulls the moisture out of it. Salt it when you eat it. But each is own, try once and you will notice difference. No change in taste either.

      Mark Neff I'll have to remember this! I'm on the Cali/Nevada border (Tahoe) and it gets so hot here it's miserable! I avoid using my oven and stove at all costs in the summer and that's when corn is at its best! Thanks!

      I've seen a guy cook it in the microwave, but he leaves the husks on instead. :) I haven't tried it.

    We call it crazy corn lol. My daughter loves this corn. I don't like lime and didn't like it on my corn, but after seeing you make the sauce I'm willing to try again . Thanks for sharing with us.

    I watched this video a few days ago, then when I went food shopping I bought nearly everything you said. I loved the awesome taste of Tajin Clasico seasoning, but instead of Parmesan cheese I bought Feta and crumbled it over the corn. Yum, it was outstanding. Thank you for this video.

    Thank you for sharing I had two pieces of corn so I have to eat this corn so I bought it and I thought I would love some Mexican corn but I wasn’t sure how to make it so I thought what the hell let me look on UA-cam and I found your channel and oh thank you so much because I have all the ingredients I don’t have any, but I’ve got Mannix I’ve got the Tatian sauce in the pot a spice I have the hot sauce and I have the corn ready to eat thank you again and I think it was like I put on it and I got there when I got Parmesan cheese I don’t have any case of Fresca in the house I need at all or what’s on something else I think a taco

    I'm originally from the San Francisco Bay and I've never heard of this street corn before, but I've seen people make this on UA-cam from Martha Stewart to 'Ms.Joe Blow' your's looks the most authentic convincingly so.

    I love to mix together my ingredients too I've done this since I was little I would always ask my mom to mix my taco meat with my beans and toppings so every bite was evenly distributed idk maybe my small mouth for a kid wasn't able to eat the taco like adults but hey it stuck and it is the best

    Sometimes I make mine in the microwave. Put corn in wet paper towel roll up and cook 5/7 minutes. Works great!

    I like to microwave mine 4-8 mins depends on crisp or soft. I find has the best smell this way, that's enough to drive me nuts. husk on when done hold some silk as rip husk off comes off clean. sometimes I will pull the husk back before cooking and add salt and or sugar. but I like mine natural.

      If you cut both ends off before cooking them it makes easy work to peel of husks and silk. I cook in microwave too so much better.

    I am with you - I don't like boiled corn (my mom used to do it - and I didn't know what I was missing until I went to a corn roast). I have a question - why do you need parchment paper when wrapping the corn for the oven? I never used parchment and would like to know the benefit (new at this)

    FYI - sugar doesn't bring out sweetness, salt does. Put salt on half a grapefruit and sugar on the other, the salt side is always sweeter.
