Just watched this and became an instant fan! I love your genuine passion for exploring different noodle soups, something I can relate to. This video captures exactly how I felt as a non-Vietnamese person exploring non-Pho Vietnamese noodle soups for the first time (albeit in the US). I think Vietnamese people are noodle soup geniuses. I love how you really embrace the funky stuff too.

Food in Vietnam is more authentic. It is the reason it is more delicious. Moreover, in Vietnam people cook with the heart and there are a lot of people to eat. They only sell one kind of food for living or becoming rich. However, in the United State people cannot earn for living such this way. If you eat “bún riêu “ without “mắm tôm “, it doesn’t have a flavor of “bún riêu “. I don’t think what you eat is real crab meat . Nowadays people usually cook crab with shrimp and meat. In USA, people make “bún riêu” dich this way too. ItAlthough I live in USA, I still don’t like to eat in Vietnamese restaurant. I cook and eat at home my traditional food.

Idk if you made this one after feedback from the first ones, but this is quite better. I think a part of your style is following you to unique spots, places we haven't seen on other channels, and unique dishes. While also getting a bit of a "tour" of the streets, a market, or any spot for good eats.
In the Old My Kind of Eats you were always on the move, picking up little snacks in between from random vendors, sitting on the curb, heading stall to stall, stool to stool.
This one is feeling a lot more like the Old My Kind of Eats but with a flair of higher quality. I really enjoyed it!

Saigon has more street foods than any other cities in VN. Not only that, when other cities' food migrated to Saigon, the flavors got changed a little bit and mostly for better.

So surprise that you can eat those noodle soup. A lot of foreigner cannot accept the fermented fish and fermented shrimp flavour. You make a really nice video especially giving the location's address. That make me miss my hometown, Saigon.
