This vid inspired me to creat my own avocado toast! lighty butterd toast with a seasoned avocado mix, topped with seared seasoned roma tomato, scrambled egg whites with sauteed asparagus, finished with a pinch of salt and pepper with fresh grated parmesan cheese... was amazing thanks Byron!

ByronTalbott Okay but I literally made buttermilk the other day by adding lemon juice to milk so I was fascinated here. I think you gotta heat the milk to make ricotta but not for buttermilk maybe?
Ayesha Irfan when you add an acid (lemon juice or vinegar) to milk it curdles (white clumpy bits). When you add heat to acidic milk it clumps (curdles) a lot. The clumpy bits that rise up is the cheese. You don't heat up buttermilk, that's the main difference.
Technically, that's quark, rather than ricotta, as it contains both casein and whey protein. It would be ricotta if you first curdled the milk using rennet as in traditional cheesemaking (which drops out just the casein), filtered out the resulting curds, and then used the heat and lemons on the whey to produce more curds, which when filtered out make true ricotta.
These look delicious! I love a good toast for a mid morning snack. Lately I do a homemade lime hummus topped wth sliced hard boiled eggs. Sprinkled with cracked pepper and coarse sea salt. Yum! I'm going to try your ricotta one!!
