Yes, I used a small amount of tuna that i squished

i want to know that do i need to let the dish rest for three minutes before serving or just serve it immediately after cooking
At the very end with the heat off, leave 3-5 min. Rice soaks up the rest of the flavor and it thickens up a tiny bit.

You can use brown rice as long as it is a short grain like a sushi rice...
can i use canned tuna? i can't get fresh tuna where i'm from. thanks
He talked about that in the end, it's okay to use canned tuna, but then just add it right before the risotto is done, instead of cooking with the rest of the ingredients in the beginning :)
would the sauce be dry then?
ziggy31337 Which sauce? Do you mean the ingredients in the beginning? Risotto doesn't really have a sauce, it's a mixture of the rice, the chicken or vegetable stock and the other ingredients. Canned tuna is certainly not as good or juicy as fresh tuna, but I it won't have a big influence on the texture of the dish. :)

No, it's not possible. You won't get the same result. Risotto without wine is like a woman without breast! :)

Not all Chilli's are hot, and the seeds are always the spiciest part, so try it without the seeds and buy mild ones, or as James said, leave it out. Just because a recipe has certain ingredients, doesn't mean it is gospel.
chili enhances the flavour massively and is crucial to Italian cooking, just put less in or deseed it
