I obviously haven't tried this yet, because I'm eating Friday dinner as I watch the video. But this looks wonderful -- incorporating a couple of my favorite foods! I live by myself, so I'm thinking that cutting the recipe in half would make a terrific and filling dinner.
The addition of grape tomatoes adds color & flavor. The sweet potato skin adds nutrients & roughage. The sauce makes it creamy without adding any cream. Great for a substantive snack or a light lunch or a late supper where you want light foods.
I just made this for dinner with a garden salad on the side. The sauce was the highlight for me. It's was great. I now have a new salad dressing for my salads

I usually don´t, but you can if you like! Much love :)
This is very similar to a staple recipe in my repertoire, except (for the only time I can think of) I use saffron where you haven’t 😅.
