i made this in Jan '21, used a little bit of it and kept the rest of it in the fridge and forgot about it; 5-6 months later, i took it out and tasted it, it tasted much better! i think time and fermentation sorta mellows it out, and now i can't get enough of it! will have to make some more now...
I'm gonna give this a try in my food processor and substitute the water for a bit of olive oil. This sauce with the tamarind sauce and some tarta sauce would be nice on fry fish and chips. Thanks for sharing👍

I used vinegar instead of lime and added sugar instead of salt . I froze the sauce and use it whenever . I love it !
