Just made this for my family Christmas celebration tomorrow. Honestly the best one that I have made in a long while. The best tip was making the "dressing" separate and then gently fold into the potatoes. Game changer. Merry Christmas sweet Trinidad and Tobago.
I just made this, with a few tweaks, I definitely added the corn, and I added some minced onion and made flavor more like we do in the South, more mustard, vinegar, and sugar, plus I added a bit of garlic powder. Yummy! That potato trick was a lifesaver! I pretty much never make potato salad because of the headache with chopping and peeling, but this way was a breeze and far less likely to overcook and cause the potatoes to break up.
My mother in law makes her potato salad similar to this but she adds a finely chopped apple, I was skeptical at first but boy does it bring out the dish even more!
I love the lemon freshness and celery crunchiness of this recipe. One little variation I love also is to toss in lemon juice over my boiled cubed potatoes and season with white pepper before adding my mayo etc. 👌🏽

I make mine the same way. my favorite. I may get heat for this but I rather without corn. lol. I think what makes and breaks your salad is the type of peas you use. some brands have nice soft sweet peas which work best. Others have peas that are quite hard and not very flavorful. Would work better if you cook those. then sometimes with the frozen peas based on how long you bought or where you bought, it tends to taste frostbitten. other than that I would say this is the perfect potato salad here.

Kezzi, girl, I could fool you on my half yogurt potato salad, haha. Indian or Greek style yogurt is thick and creamy without the sourness of other yogurts, and it stays yummy. Tasted just like Mommy's, and everyone loves hers. I've done sour cream as well instead of yogurt. It works well, but I always have yogurt. Can't wait to try this! Kezzi, you're hilarious with the healthy food eye roll lol! Is the acid typically lemon in Trini potato salad? We use white and/or apple cider vinegar. We also use LOTS of egg in the South--an egg per pound of potatoes is perfection

You can do it like that also. The conversation with that is that sometimes nutrional leaching tends to occur when the skins are off and the probability of the potatoes becoming too water logged may be a possibility.

You can peel and cut up the potatoes then boil.
Cooks faster and you don't have to wait for it to cool to peel and cut up.
I heard that boiling the potatoes whole allows for the seasoning to penetrat the potatoes better.

First time I made potato salad I added celery. Next time I substituted chopped sweet pickles for celery. Tastes so much better.

I sometimes add boiled and diced beet root to get the nice pink colour. I also dice my potato before boiling and it doesnt melt away.

I actually loveee Greek yogurt (as a snack with some berries thrown in) so I’d love to try your yogurt potato salad.
The way I like to make potatoes salad interesting is by adding beets; preferably pickled beets. Sooo good.
I does add lots of chopped celery and chives to mine. You can add will too.
