    2 large potatoes, peeled and sliced
    1 can of Salmon
    1 tablespoon baking powder
    1/4 cup All-Purpose Flour
    2 tbsp Onion (minced)
    1 tbsp Parsley Flakes
    1 tbsp Seafood Seasoning
    1 egg
    1 cup of oil for frying
    Directions
    Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are tender. Mash and set aside.
    Add the fish to the pot and cook until soft and flakey. Drain well and transfer the potatoes and fish to a large mixing bowl, add all-purpose seasoning, baking powder, flour, onion, parsley, and egg to the bowl; combine the mixture. Mold the fish into patties.
    Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.

    The salmon cakes look so delicious. I can just about taste them. I will be making them.
