I am all done with my tomatoes, the squash, the pumpkins, the tomatoes all the vines are beginning to die off, but I have some volunteer tomatoes that I might put in pots in the plant room, tropical planets
Most of my tomatoes are still green. Hope they ripen up quick or the 1st freeze comes late

You can also use your bottom oven as a warming oven to keep things at a very low temperature until serving. My mother always had a double oven.

I used my seeds and skins as I put them through the the tomatoe apple mill and dehydrated them together and put through the grinder for tomatoe powder!
I absolutely agree about having appliances working for me. I do my roasted marinara exactly like you did, always having the oven going while I'm doing something else. I also try to wash my tomatoes as I bring them in so that I can skip that step on processing day.
I found that it takes too much time to refigure the food mill every time I need it not to mention getting frustrated! After I’m done using it, I take it apart and wash it thoroughly and reassemble!I cover with a large plastic bag and put up on a shelf for next time.

I use a handheld suitcase scale and baskets to weigh my toms. All af my baskets have their empty weight marked on the bottom. Works for potato/apple harvest too.
We used to buy a special tomato vine. It looked like a sickly gray and it made the best Roma tomatoes sauce. We would buy 150 each year to go in our garden.

Hi Becky, not sure if you know this but the screen that shows the weight on your scale pulls out so with the sheet pan being so big you could pull the screen out so you don’t have to try and read it under the pan.
Use baking soda and white vinegar. Let soak a little use soft scrubber to clean. Works for me

Becky why not go one step further with freeze drying the pulp or skins from your food mill and just run all tomatoes thru the food mill! I do that as well as when juicing any fruits and vegetable skins. Then I just powder that and use those powders to flavor other foods as well as adding salts and herbs! It really doesn't take that much more effort for such a wonderful benefit!

Freeze dried fried ground beef would be wonderful to add to your marinara sauce for a quick meal.

Soak your cookie sheet and scrub off the burned sugars. Barkeeper's friend works great to clean pots and pans.

Put crushed egg shells on your soil, slugs hate crawling on them. That kept them away from my tomatoes and radishes
