      That's because he actually respects them. He's in their house and he's genuinely interested in exploring the culture that goes into their cooking. Also, the food is delicious and they are clearly experienced cooks/chefs, which he certainly also respects.

    Every local Hawaiian cook has their own "secret" marinade recipe. But it's basically...Coarse Hawaiian sea salt(pa'akai), kosher salt can be substituted....paprika, chili powder, granulated garlic/onion powder, chili flakes, coarse ground black pepper....Add as much, or as little, as is your preference. Cooking, especially BBQ grilling, is HIGHLY subjective because EVERY cook has their own taste preferences....like an rain drop in the ocean's water.....

    Chef Ramsey, the term “hulihuli” means to constantly turn. TRUE hulihuli moa (chicken) is using a rotisserie on a spit and Keawe wood. The wood is what gives the moa its distinct flavor.

    I was here two months ago with my family. The ride up the road was beautiful. The chicken and ribs we got were so good, and we had sweet little dogs around hanging out with all the customers while they ate, just chilling and letting everyone pet them. It’s a great time

      The chicken and ribs and a sweet little dog? Are you sure you went here at Huli Huli Chicken at Koki Beach? I think you went to Braddah Hutts Hawaiian BBQ (which I really love and recommend to anyone driving on The Road to Hana).

      I went last year with my family. Maybe the first family trip where no arguments broke out. It’s impossible to not be happy in Hawaii. The drive was truly amazing as well!

      This is the Road to Hana, right? I remember going there years ago with my family and the traffic was so bad it took like 3 hours and we only made it halfway before turning around, lol. It was a nice, sunshiney day, and the views were beautiful, but the traffic was just insane.

    The chicken (and pork) have a unique flavor due to the wood used... I've had cue in TX, KS, CO, ID, CA, PA, NC, VA, etc... and this stuff is as good as any, and a little different. Super portions, $20. Do yourself a favor and take the back way into Hana, probably best done on an ADV, and def not in a rental mustang :) Stop at a fruit stand, the one closest to Kipahulu is run/owned by the guy who started the organic farmers association. 600 curves if you go all the way around the island.

    Just got back from Maui with my wife and I drove Hana road and found this place.... It was the best food and best place to eat on the island. The owners and staff were awesome and obviously loved what they do. Making a living BBQing on the coastline can't get any better. And prices were very fair for the distance traveled to get ingredients there

    Hawaii is a fantastic trip a couple years ago. The food to die for, it is a must visit just for the food, the scenery is second. Amazon, car hop trays.

    We just had the chicken and pork & cabbage yesterday in Hana down by the beach and we loved it! Combo has salad and macaroni salad also with local soda. A variety of choices including green tea. Good people too 👍🏼👍🏼🤙🏼🩷🌈

    Huli huli chicken seems familiar to the filipino bbq liempo. Could have originated from filipino immigrants. I could be wrong but it's very similar. Instead of ketchup, we use banana sauce which is our ketchup.

      If you're just using huli huli sauce
      There is the Filipino Hawaiian sauce though, idk the name but the ribs are kalbi so I think that's the name of the marinade as well
      Our Filipino/Hawaiian uncle gave us a recipe

    BBQ chicken, done right, is an absolute delicacy.
    The problem is, doing it right. It is SOOOOOOOOOOOOOOO easy to overcook chicken, and we all know how ""good"" undercooked chicken is for the human internals.
    It takes mastery to get it just right.

They work in flip flops and board shorts, no shirts, and drink beer while working… it was crazy to me lol

      It also can take you all day just to drive up that road with how insane the traffic is on a nice, sunshiney day. That road is notorious for having tons of tourist traffic. They were actually lucky it was raining and not packed the day they filmed this, lol.

    for fundraiser, need the wire grates that sandwich all the chicken, secured to poles on both ends. that way you huli 'em all at once. trick is to make sure the grates hold but don't squeeze the birds.

    Had some yesterday. $20 for a half chicken, with no sides. It was fine but honestly not that special. At the price I wouldn’t buy it again. It was the last piece available on a rainy day so maybe that was it.
