- Chartreuse may not be the first thing you’d reach for to pair with Irish whiskey, but if you think about it, we have monks to thank for both so maybe there was a little divine inspiration involved in this drink!
I’ve tweaked the ratio from the original (as have many others before me!), and this makes it a light and herbal Manhattan variation.
SPECS:
60ml single pot still Irish whiskey
20ml sweet vermouth
10ml green Chartreuse
2 dashes orange bitters
Lemon twist to garnish

Mmm... Chartreuse... I Love it. When I was a bartender, a couple of us who really loved it would do shots of it, and drink Last Words, etc, regularly. I just wish it weren't so damned expensive. ~$60/bottle here.
This will sound crazy to most, but we made a sour just using Chartreuse, Angostura bitters(a Lot), and lemon juice. The Chartreuse is so sweet you don't need a syrup to balance the citrus. It was bold as hell, as you'd expect, and so good. We actually ended up with some of the "regulars" ordering it fairly regularly for a while.
That sounds interesting! Love when drinks that sound weird just work...

Chartreuse is my favorite liqueur by some margin, it's great stuff. Tipperary's are a go-to stirred drink at cocktail bars.

Where I live in Texas a bottle of Red Breast 15 is about $100. I'd feel strange making a cocktail with such a nice whiskey. I tried it with the Red Breast 12 that I have on hand though lol. Delicious! Thanks for the recipe!

Looks fantastic, I don't have a lot of experience with Chartreuse so any time I can see it being used in a cocktail is interesting.
Such a great cocktail. I made it with Redbreast 15, Martini Rosso, and Angostura Orange Bitters and was almost blown away. For my next try of this, I will "ozify" the measurements to 2 oz (60 ml) whiskey, 3/4 oz (22,5 ml) vermouth and 1/4 oz (7,5 ml) Green Chartreuse. My hope is to make it even brighter and more citrusy. I love those notes in the cocktail!

I LOVE Chartreuse and sip it with a single rock once in a while. But it is an extremely strong and sweet flavor and I agree that equal parts is way too strong. The usual ratio I use for the Tipperary is 1.5 parts Whisky to .5 parts Chartreuse to 1 parts Vermouth but I like mine a bit strong on the herbaciousness. Cara's ratio would work pretty well for those who find Chartreuse too strong.

Love your videos...I saw chartreuse in my local liquor store, I didn't know they could be so pricey and in such a large bottle for being used in such small amounts in cocktails

I loooove chartreuse! That being said, I agree it's tough to use in a cocktail; I typically just sip it neat like other amari or aperitifs/digestifs. Definitely gotten a few odd looks from bartenders when I order it that way lmao.
The combination of irish whiskey and chartreuse instantly reminded me of the dublin Minstrel, a last word riff by Simon difford. It simply replaces the gin for irish whiskey
I’m always looking for ways to use my green chartreuse. The “emerald gold” doesn’t come cheap so I like to reserve it for cocktails where it shines like the Bijou. 🥃
Totally fair! I do tend to use it more as an accent just for personal preference but it means a bottle lasts forever haha
The Bijou is another great use for Chartreuse.

Anyone here tried the riff of this by the Dead Rabbit in NYC? It has addition of a smokey island scotch and uses Campari for the bitter component. They called It the mean fiddler... Pretty tasty also.

You said “The original Tipperary cocktail did have an orange twist”, but in fact in the original recipe there is no garnish at all. The 1917 book says “Shake well in a mixing glass with cracked ice, strain and serve.”

My friend makes his own chartreuse, and grew some of the herbs himself. It’s gold and really rich, I’m a big fan. I use it to make the Alaska and similar drinks.
You should try the Alaska, it uses Amontillado Sherry... I know you like Sherry. 😂

I really agree on the overpowering might of chartreuse. All those last words and other equal part cocktails with it just end up tasting like watered down chartreuse and nothing else to me.

That looks good. I just looked up the price on Redbreast 15 year in my area $83USD before all the taxes. What alternatives would you recommend? Also, Green Chartreuse is favorite for Last Words and Final Words.
If you can find Slane, it would be a great alternative for around 20-25 per bottle

No Chartreuse. Subbed the closest herbal in my cabinet. Fernet-Branco. It’s a very nice cocktail. Had some Dolin left in the fridge but no Regan’s Orange so used Angostura Orange. Tasty. I feel I should name it , so “Divine Donegal” it shall be.

I find anything herbal to be usually rather strong. I definitely don’t think that I’d like the original recipe using equal parts.
My favorite cocktail is the Last Word. It uses equal parts: gin, chartreuse, maraschino and lime juice.

Definitely not dissimilar although funnily enough (given the name!) the Greenpoint is with yellow chartreuse 😊
I’d just use Becherovka instead. No need to ruin whisky with that Chartreuse stuff.
