Caramel Apple Pie Filling - Oh my!

  • This pie filling is so good! I had enough left over to make a pie for church last Sunday, and it was gone in a flash! (Well, we are a very small country home based church, but it went fast!)
    For each quart jar:
    2 1/2 lbs apples
    2 Tbsp lemon juice
    1 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/4 cup butter
    1/4 cup firmly packed brown sugar
    1/4 tsp salt
    1 tsp cornstarch if needed to thicken - I didn’t use

      It was so good! I took a pie to our small church fellowship last week. It was gone quickly with people going back for more.

      The pie I took to church was so good! The nice thing is that I can use this recipe anytime I have 2 1/2 lbs of apples. It can be made when needed too! I am sure I will run out quickly, so that’s a good thing! May God bless you!

    Looks wonderful, I canned apple pie filling for the first time this year. 9 qts and none of them sealed. They are now in my freezer waiting to be used.

      I found out the hard way, don’t overfill the jars when canning apple pie filling. I left over an inch headspace (it called for 1/2”), and I think next time I will leave just a little more. I had one false seal, so I would definitely increase it.

    Looks amazing, I wouldn’t be concerned about the butter because canning meat has a fat in it, I would be comfortable and I’m going try this 🙂❤️

    Do you have a apple peeler, corer, slicer? All you have to do is put the apple on to a few spikes and turn the handle and its done in seconds. I have a few of them, they are cast iron and one kind has a suction cup to attach it to a table or counter top and the other kind has a thumb screw. They work great when you have a lot of apples to process...
    I would put a few of those caramel apples into the blender with some coconut ice cream and make a delicious smoothie as my wife can't eat gluten (pie crust). Sadly most gluten free products aren't very good tasting and they have a weird texture to them as well...

      I do have a couple of those peeler, corer, slicers, but I haven’t had good luck with them. Maybe it is this type of apple? I usually end up using a peeler.

      @@VickiesCountryHome youtube is hiding my response I left you 2 days ago because I added a link to it... I checked with my backup channel and its not visible. There are videos on how to set up the peeler up on youtube, yours may just need an adjustment. I use mine to peel potatoes too, all I did was removed the slicer part... : )

    Hi Vickie! What did you do for thickening when making the pie? I sure wish I had this recipe last month! I didn't have any clear jel so no thickener for canning. Ended up making 3 types of applesauce and then apple peel/core jelly. Would have loved to have tried this! 😃

      I didn’t have to add any thickener at all! You can use clear jel or cornstarch if needed, but I didn’t. I poured these directly into an unbaked pie shell, put the crust on and baked it. It was awesome!

      @@VickiesCountryHome I was told I shouldn’t use cornstarch if I was going to can the apples. Could you please clarify?

      From my understanding, the corn starch is a quality issue. Like flour, it will separate over time. The clear gel is a modified food starch, and doesn’t separate.
