    You are the first person I’ve seen that actually blanches the apples! I read that’s an important step to help keep them firm. I think it also helps with the swelling in the jar. I blew a lid when I tried skipping that step. Thanks for sharing the video! Filling looks beautiful!

    Clear gel always makes things expand in the jar. This will be nice to have on your shelf.

    I made this same recipe today, but I wasn't thinking and added the lemon juice when I added the juice, I didn't blanch my apples, and like you I didn't have enough to finish the 7th quart so I added more apples, hopefully it will turn out alright.

    You are the second canner who used that recipe who mentioned the same problem with the head space. Definitely need to leave 1 and a half-2 inches of head space to avoid the leakage during processing.

    As I was watching I was telling you leave at least another half inch head space that recipe tends to swell lol .... ask me how I know lol. Of course you couldn't hear me and this wasn't live lol Thank you for all you do. Happy Holidays.

      It’s funny, because I have made this same recipe before, and it worked out fine. The recipe in the Amish Canning book called for Clear Jel, but next time I will know to leave more head space. Thanks for watching!

      I probably missed you by a week! I went on October 1st (a Thursday). I bought a box of Mutsu apples, and a box of Bartlett Pears, both seconds. I am Northeast of Reno, so it is definitely a day trip to go there!

    love it. can you use less sugar? I am a diabetic. Yes, I know now suppose to eat stuff like this, but ya only live once lol. I don't care for really sweet tasting things anyway, but omg !!! this looks so so yummy

      I haven’t tried reducing sugar. I am sure you can reduce it some, but you do need it for preserving.

    Could you make this jar and seal it with the foodsaver wide mouth jar thing that sucks out air? Would it go bad being in the pantry by doing this and using the foodsaver? I’ve never canned and just trying to find ways to use the foodsaver thing on one of your other videos :)

    Is clear jel the same as sure jel?

    • @VickiesCountryHome
      @VickiesCountryHome  2 роки тому

      No, clear jel is a modified food starch for thickening. Sure Jel is pectin to use with fruit.

    Is there any reason for not using fruit pectin as a thickener?? Thank you!

    • @VickiesCountryHome
      @VickiesCountryHome  4 роки тому +1

      I’m not sure, I haven’t tried. The recipes usually call for flour or cornstarch, but neither one holds up well in the jar.

      @@VickiesCountryHome Thank you for answering me :) I did some research and found out that fruit pectin behaves differently than the clear gel. So, I found clear gel on line and ordered some.
