When I was in elementer school, we had this Thai janitor. A very beloved lady and a strong spirit as well! Once a month, the principle asked if she could make us, all the 75 students (small school), fried rice. She was thrilled that we all absolutely LOVED her food that she grew up with in Thailand. The first time she made this, she started to cry a little, as when she grew up, after she moved to South Franch first as a child, she was made fun of for her culture by asshole kids. And such things leave scars. As a adult, living now in Norway, she challenged her scars and made so delicious food for closer to 100 people, including the teachers. Seeing a grown lady grow as a person was just magical, as she was this lady who was hard working, insanely smart, compassionated and just a whole lot of joy to be around. Pls note, touching the rice and breaking the rice with the fingers will make the rice spoil super fast. So if you do use your hands, refrigerate or freeze the extra for later. If you don't want to, you've got to eat it at least within 4-5 hours max. Great recipe, my mom makes this with left over rice, with chilli flakes and purple onion and egg and green leeks or green onions. It's a staple since childhood apart from the fresh white rice she cooked with the other curries . Love from Sri Lanka 🇱🇰💚

y'all i have made this so many times and this recipe is sooooo amazing. i add any protein i have sometimes but if all you have is egg this is so cheap and efficient for days you're tired but want something delicious ❤

Those eggs looked so bright! For the best eggs, you need to get your hands on pasture raised (not pasteurized) eggs. They are more ethical than regular eggs, giving the hens 108 sq ft of space each! And the hens get to forage outside so the yolks are brighter and more nutritious. They're a little more expensive but WELL worth it. Thought I'd let the UA-cam fam in on a little secret.

Tip, if separating cold rice with your hands, add some oil to your hands so the rice doesn't stick to your hands as much.
Air fryer egg rice is one of my favorite things to cook. It's basically like oven baked rice
