It is mango season in Florida, so today, I want to use this lovely tropical fruit to make probably the most popular Hong Kong dessert - Mango Pomelo Sago, or what we call 杨枝甘露. This is perfect for hot summer days because it is delicious and easy to make. I didn't use a lot of sugar, so it is not too sweet, but it tastes natural, fruity, and refreshing. Most importantly, this is such a beautiful drink for making a perfect Instagram post. Although the presentation doesn't matter, indulging a touch of elegance in your life is quite nice.
Sago, also known as tapioca pearls, is similar to the bubbles in bubble milk tea, except it is smaller and white. It doesn't have any flavor on its own, but it adds a nice texture and makes this dessert fun to eat. You can click here to purchase it.
Ingredients (3 servings)
360ml / 1.5 cup of evaporated milk (1 can)
75g / about 6 Tbsps of tapioca (Amazon Link - geni.us/tapioca-pearls)
600g of mango meat (about 3 large mangos)
37.5g / 3 Tbsps sugar
240ml / 1 cup of coconut milk (Amazon Link - geni.us/coconut-milk)
1 red grapefruit
Mint leaves as garnish
Instructions
Pour 1 can of evaporated milk into ice cube trays and freeze overnight. Evaporated milk is made by removing water from fresh milk and heating it, so its flavor is more concentrated than fresh milk. If you don't have it on hand, you can use fresh milk as a replacement.
The next day, bring 1.5 liters of water to a boil and add the tapioca pearls. Switch the heat to medium and let them cook without the lid for 10 minutes. During which, stir gently once every 3 minutes to prevent the pearls from sticking to the bottom.
After 10 minutes, the sago becomes translucent but still has a white hard center, which looks a lot like caviar. Put on the lid and let the pearls sit in the hot water for 15 minutes. The rest of the heat will continue to cook them until done.
While waiting, take the flesh out of a grapefruit. Use a pairing knife to score the grapefruit skin across the middle. Then, stick a chopstick underneath and wiggle it around to lose the peel. Do the same thing to the other side. If you don't have chopsticks, use a spoon. This way, you will be able to remove the peel and separate the segments without cutting into the flesh.
Carefully peel off the translucent membrane and take the grapefruit meat out. Tear the meat into small shreds; try not to squeeze the pulp if possible. In China, you are supposed to use red pomelo, which is bigger and sweeter than grapefruit, but I couldn't find it around where I live, so I use grapefruit as a replacement. Set the pulp aside.
Cut out 3 ripe mangos. Slice the mango down slightly off the center on both sides. Use a pairing knife to score the flesh, but don't cut through the skin.
Take a spoon and scoop the mango meat out. Oh, by the way. Make sure the dice are not too big because this is supposed to be a drinkable dessert that you will serve with a thick straw. You want the mango pieces to be able to go through the straw.
There is still some flesh attached to the seed. Don't waste it. Remove the skin first, cut of the meat as much as you can, then use a spoon to scrape the last little bit.
I used three mangos, and I got about 600g of meat. Set it aside.
By now, the tapioca pearls should be done soaking. You can see that the white center in the tapioca pearls is disappeared. That is perfect. Drain the pearls and transfer them into an ice bath to firm up the texture.
Take the frozen evaporated milk out of the freezer and pop it into a big blender. Add 1/2 of the mango flesh, 3 Tbsps of sugar, and 1/4 cup into the blender (reserve 3/4 cup for later)
Use the on-and-off mold to blend until smooth. You may need a spatula to help the blender a little bit. Please be careful and don't stick the spatula too deep.
Drain the tapioca pearls and set them aside.
To assemble the dessert, add some diced mango to the bottom of a cup; follow up with a layer of shredded grapefruit and a layer of tapioca pearls; then pour in 1/4 cup of coconut milk and fill the rest of the space with the mango milk blend; finally, top with some extra mango and grapefruit. Garnish with mint leaves. This recipe is enough to make three servings, so you should roughly divide all the ingredients into three portions but do not need to measure them precisely. Just go with your feelings.
You can drink this dessert with a thick straw. If you don't have one, serve it in a bowl and enjoy it with a spoon. - Навчання та стиль
That last part about creating a ritual and serve yourself. Is golden!! 🙌🏿🙌🏿🥰🥰
I love making this every summer, I blend the mango with raw milk instead and I don't add any sugar. When I worked in Hong Kong I had the pleasure of eating at the restaurant of the chef that created this dessert I tried a different dessert he had at the time and it was so good. It was honey dew melon and water chestnut in tiny cubes, coconut milk and sago, it was a cold dessert, so refreshing, never thought I'd enjoy water chestnut in a dessert but it worked!
May I ask what the name of honeydew melon is?
Maybe some simplified instructions?
Thank you so much.
@@mddell58 I do not have the instructions, I was only at his restaurant once... I can describe it... it's like a soup, so I would think you make the sago the same way Mandy is here. Now I'm just guessing here, blend some melon with the coconut milk (might have to play with ratio and I'm not sure if this part was previously cooked then chilled, as cooking do bring out the flavor), So if you do cook it, chill in fridge for a couple of hours, cut some melon and water chestnut into tiny cubes like 4mm x 4mm then place every thing in a bowl...? that is my best guess from making Chinese desserts.
Where do you get raw milk!? They only sell the watered down stuff here in Maryland
Raw milk is dangerous, please don't do that.
@@Shirogane-Naoto that's not true at all. Raw milk is literally a super food. Milk from industrial farms where the cows are shot with hormones and chemicals and fed GMO soy based feed is dangerous and what little nutrients is in the milk is cooked out through the pasteurization process. Raw milk from good farms where the cows only eat grass , get to roam around and are never shot with hormones or chemicals is the best thing for you. It's packed with nutrients.
Amazing share dear... Liked it a lot 😍👍
What a beautiful creation!
What a clever and fun way to peel a grapefruit! Love it!! I hate the 'skin' between the segments and this is a far less messy way to get rid of it. *THANKS MANDY!!*
Mango is my favorite fruit, that smoothie looks amazing!
Wow, that looks so delicious!!
Thank you Mandy! It looks delicious.👍
Looks so colorful and delicious! I can't wait to try this. Thank you!

Hi S.U.R! That recipe looks so good. ty.
Wonderful!!!!
❤ Looks so beautiful! Sadly, I have never cared for mango, or grapefruit.
But, I'll be sharing this with a friend or two.
Have a beautiful day.
Delicious!
mmmmm I love mango!
Like a layered shake & could make an nice cafe addition among seasonal menu items
Beautiful
Thank you. Yum!
I might try this with cherries or strawberries (as those are currently in season where I live) this weekend. Thanks for showing how to cook the tapioca pearls. I never quite knew how to prepare them.
I love this drink! Was just craving this when I saw it on my feed.
Mango and pomelo season at my grocers rarely overlap. Lots of mangoes rn but pomelos are usually only sold around lunar new years.
Thank you
Thank you ❤❤❤👍
That is wonderful! I never saw that method of making grapefruit segments before, and it seems just as good as the French method of digging the segments out with a paring knife. I wouldn't add so much sugar, though, and I might use honey instead.
Love mango 💗
So refreshing drink 🍸 😋 😅
Super mango smoothie 👌I enjoyed the video to the end thank u so much for sharing my friend 👍🏻keep going & STAY CONNECTED DEAR
gracias
Its mango season in south east Asia too..will try that out
Second, your the best my family loves you 💕
Yummy! I only need to buy tapioca pearls to make this. I’m gonna make these for my Memorial Day BBQ.
Yummmm
Love a recipe for general tao noodles
I wish I could get a mango like that in Denmark. All we ever get are those fibrous, resin-y Kent ones.
Looks amazing. I could eat that for breakfast on a summer day when it feels too hot in the morning already. I guess the tapioca pearls could be prepared the evening before and stored in water in the fridge?
If you let the tapioca sit in the fridge overnight, the starch will retrograde, and the texture will change a little bit. Well, I think it is delicious though.
In TCM, how do you place a dessert in your day? Do you eat it by itself? Or after a fiber/protein meal?
*ang laki na ng tinaba nya!* 😮
Yummy smoothie (Pakistan 🇵🇰)
Sago and tapioca are different things though. Sago is from the sago palm while tapioca is from cassava. The former is lot less gloopy. Though I'm not sure if real sago is available anywhere outside Southeast Asia so it doesn't really matter.
Thanks for sharing that information. I’m thinking probably could be found in the huge Asian supermarkets. I love the examples of making bubble tea pearls by hand! Can’t do too much. So calorie dense!!😊
I'll have to wait for 6 months before making this...we're into Winter in a couple of weeks here :P I'll see if I can get blood oranges...I can't have grapefruit :P
I eat mango once/twice a week and ALWAYS peeling it with the peeler, then cutting off 2 parts , the dicing. Much less hustle
2:10 This can be done with a serrated knife or a birds beak parring knife for the novice cook.
Alternate of grapefruit?
Hi, can you help me? I bought your wok recently and love it! however, I cooked an egg the wrong way, the wok was too hot and it burned. how do I clean the burned egg off without ruining the wok? thank you!
Scrub the wok with a ball of steel wool. Don't worry, it won't damage the wok because carbon steel is a tough material.
👍👍👍👍👍👍👍👍
1.76m...Very nice work...I have subs
wonder if you could replace tapioca with chia seeds if you dont have tapioca
I think that is a good idea.
i don't understand people choosing something else over mango sago as finale dessert in chinese set meal. Imagine choosing almond jelly lychee or grass jelly over this.
Don’t forget moon cakes 🥮 or egg tarts 😊
I am not allowed to eat pamplemousse bec.of hypertension medications;what will be the replacement for that please. Thank you very much.😊
Same here, but I eat it once in a while. Just not often. I daily measure my blood pressure and can't see any spike after consuming grapefruit or pomelo.
What can we use to replace the grapefruit?
Orange
@@SoupedUpRecipes Thank you 😊
No mango seed?
😁👌👌😋
Yummy 🧋🥭
I'm allergic to coconut. Is there a replacement?
Use regular milk or almond milk
Tapioca pearls in my part of North America have ceased to exist for about 5 years now.
If you are able to order off amazon they should have it

Sugar bomb )))
I tried making this today. The taste of coconut milk was very strong and overbearing for me and ruined the taste of the dessert
😅Guess I am 3rd.
First comment.
High sugar glycemic load high carbs....etc. no no.
...this looks delicious and a way to cool down in the summer!! Xie xie ni, Mandy
