Palencia is a great "off the tourist routes" location. Recommend it. The least travelled Camino to Santiago is Camino de invierno. The problem is that there is little in the way of pilgrim infrastructure, hardly any albergues. The greatest concentration of 12th century Romanesque (románica) churches outside of any city is a location called Ribeira Sacra.
