A quick stir at the end as you incorporate the other ingredients are all in seconds, maybe 30 seconds for garlic and chilis enough to energize there aroma and flavor but not to burn them. The longest cook time is the bok choy in initial prepping but it only takes a few minutes in the steam . This is a quick meal. Like most Asian stir fry dishes prep time can be longer than cook times. so absolutely get everything ready as there is no time during cooking to do anything else. Nice recipe.

It is a Debuyer 12.6" carbon steel pan. It is lighter than a cast iron pan but still quite heavy duty, plus it is quite nonstick after it's seasoned (like cast iron pan).

Because the sauce needs to cook longer to glaze somewhat on the vegetables while the corn starch would break down after that much overcooking
