Love that you toasted the bread in the rendered beef fat. I imagine that beef tallow toasted bread - topped w/ sea salt, parsley, capers, and red onion would be the ultimate 'toast'.
That looked like a pretty good Martino. I'm from Belgium and I love this sandwich. Its's a real flavor bomb but to be honest it's getting hard to find good ones over here. But your version looked pretty good. A really good variation on this is the "Tonijntino" which switches out the preparé americain for tuna salad. So if you're squeamish about eating raw beef that one is a good option.
Thanks for making this! I had one in Belgium about 15 years ago. I just asked the person at the counter what the best local sandwich was. I ordered a Martino based on his recommendation without asking what it was. It was delicious.
My dear old Granny would have loved this sandwich! She adored steak tartare and I can remember being a youngster and watched her eat it in a restaurant with astonsihment! I have never had the courage to try it myself, but applaud this effort -- I just wish my Granny was still around so I could make it for her.
Glad to see that burger, I figured that mixture would be nice cooked as well. That said, I've enjoyed raw beef and egg in South Korea and Japan, I could see this being very nice!
I have to be careful with my diet currently, but I’d definitely eat that sandwich without the raw beef. I get my eggs from a friend who is friends with chickens, so I’m not as worried about raw or runny yolks. I have all those ingredients, even those specific potato chips. It looks tasty, so thanks for a good meal!
You know I was thinking about it and Sausage making is a big deal where I am from, German settlements here years ago... and the old guys who would make it homemade - at least some of them I knew, would taste the seasoned meat that was run through the grinder directly from the holding pan. Not all would do this, though.
perfect timing! i just caught up on the episodes i missed from the week and thought to myself "i need more, barry." and within minutes, i got more barry B)
One note on store-bought steaks: They don't have to label whether they are blade tenderized. If they are, this means bacteria from the outside of the meat has been transferred into the meat via the tenderizing blades and it's not save to eat raw or rare. Make sure you get your steak from a butcher who knows whether their steaks were blade tenderized!
Lived in Brussels for 8 years and saw American Prepare and Martino all over (you could buy so many fresh premade sandwiches at places like Delhaize or Carrefour) Never saw it with the anchovy, but the smos (lettuce, tomato, boiled egg) was on point. What I actually think this is missing is a layer of thinly sliced pickles / cornichon. IMO it's the acidity from those that really bring it all together. As an American, it was tough to get over all the raw beef at first, but never once did I get sick from it, and almost every time I thoroughly enjoyed it when it was done properly!
The sandwich looks good to me, but I would definitely have baked that filling into a meatloaf. The Gross Misappropriation Martino Sandwich is 100% my jam.
Great job as usual, Barry! I love a good tartare and, other than the anchovies (overkill IMO), I was with you all the way... including the smash burger version. Well done with the chips, too!
"Filet Americain" is a thing in the Netherlands. You can get it prepared in several varieties (although it looks nothing like the original recipe). Eating it isn't considered anything special here. If you go to our neighbors, they even eat raw pork, called "Hackepeterwurst". Very tasty as well.
I'd just like to point out that even with the regular, widely available eggs, your chances of getting salmonella from them is slim to none. I never give it a second thought.
My husband, and his father before him, eats what he calls cannibal sandwiches. Very lean, high quality ground beef on a slice of fresh bread, open face. Me, no thanks, but he loves it every few months or so. 🤷♀️
As a German who quite enjoys his occasional Mettbrötchen (basically a bread roll with spiced raw minced pork and usually diced onions) I approve of this. I would probably swap the tomato for some onion though.
I think I would sous vide a steak to the lower limits of rare for a few hours before grinding it. Call me a coward if you must, but it would just make me feel a whole lot better about eating "raw" beef.
With apologies to Sir Terry Pratchett: Well, one out of three ain't bad…¹ ______________________________ ¹ Actually, it’s only thirty-three percent, but it could be worse.
IN THE CHIPS CROSSOVER!!!
I cannot believe In The Chips Barry would allow this without comment.
One of these days those two guys should collab. They have such similar senses of humor!
Another great one from my sandwich history provider.

I hope the hens got a raise along with that fancy new job title

"Egg yoke provider" had me laughing out loud before I saw the caption 😅
I trust my egg yolk provider, but not my egg shell provider. It's a problem.

Looks great, I would trade the catsup for capers for a more classic tartare profile

Years ago 70's and before 'cannibal sandwiches' were available at most gatherings to one extent or another.
I searched cannibal sandwiches and my state was the first one listed?

Beer too!

This actually looks delicious, I was not expecting that
I thought you were going to bake it.😂, but I LOVE that you remixed it immediately.❤
'An inspired episode!' (Coming from a huge Martino fan.)
Thanks!
Nice freestyle with the improv smash burger

YES!!! As a mostly meatatarian, I love French (or Walloon) beef tartare! YUM! The sliders look good too.
Always wanted to try out raw beef such as steak tartare! So many people are against it but it really depends on a lot of factors.
I lived in Belgium for 10 years… I ate Martino sandwiches every freaking day!
The Belgian Martino plussed up with a completely different sandwich! 😂
You did almost exactly what the French do with l’américain, a classic lunch of steak haché served in a baguette.
The sandwich looks good to me, but I would definitely have baked that filling into a meatloaf.
The Gross Misappropriation Martino Sandwich is 100% my jam.

Cooking the beef took it from a Martino to a Martiyes.

The cooked version gets the 👍🏽
I don't know this Martino guy, but I figure he was a plumber, because that sandwich had everything AND the kitchen sink.
Tartare is my favorite meal, so I think this sandwich sounds delicious

Looks much better cooked!😊
Quality content

Yes!
Surprised you didn't plus this one up with caviar. Such a fancy sandwich. I liked the second one.
I was thinking, “some potato chips would be good on there, but he’s not gonna do that, who would do that…” But he shoots, he scores! 😃
couldn't you have called the cooked one "American Martino" and given it a score? So what is your score of the cooked martino?
Double ‘ahhh’
I'm more interested in the smash burger
Same.
Dill-infused havarti would make it even more interesting!
As a German who quite enjoys his occasional Mettbrötchen (basically a bread roll with spiced raw minced pork and usually diced onions) I approve of this. I would probably swap the tomato for some onion though.
That's cheating because you can sub onions for literally anything and it will make it better.
@@Andrew_Erickson LOL true, onion is my favorite vegetable
It's the steak tartare sandwich!
The chips 🎉
It's a beef tartare sammy!
I love sandwiches but the first one is not my thing... the burger version looked tasty though
Cool shirt!!!
But not your egg white provider?😂
RAW BABY, RAWWWWWW
Do Mexico , torta ahogada :)
Dizzingly bold
I think I would sous vide a steak to the lower limits of rare for a few hours before grinding it. Call me a coward if you must, but it would just make me feel a whole lot better about eating "raw" beef.
Brave.
I would rather have the burger version

Wooo
I’m terrified of raw beef
I know I’m gonna screw up the prep and I’m not jonesing for salmonella
e Coli is the more likely bacterium of concern here.
Nevertheless
Rare beef?Sure!RAW beef?No thank you.But them burgers looked killer!
I'd definitely eat the first one... With cooked beef. You don't even notice there's raw beef, so why not cook it?
Obviously I'd eat the burger.
Yea, no offense to the Belgium history. But, I would only plus that up as a burger. Minus the anchovies.
The Bartino > The Martino.
Why ruin the beef with anchovies and tomato. This is meant to be eaten alone.
It always feels dishonest and disrespectful to call mayonnaise aioli.
Cool
I love me a steak tartar. Keep the anchoves and I am in on the raw one.
Day 49 of asking Barry to make the sandwich I submitted!~~
I love using chips as a plus up in my own sandwiches. Glad I’m not alone. Cheers Barry!
the vegan fan base appreciates the early heads up.
