Yield: 1 9-inch cake
Servings: 12

Ingredients
Cake
1 cup (250 mL) milk
½ cup (115 g) unsalted butter
1 cup (165 g) cornmeal
1 cup (200 g) granulated sugar (caster sugar)
4 large eggs, at room temperature
2 tsp (10 mL) finely grated blood orange zest
1 cup (100 g) ground almonds
2 tsp (10 mL) baking powder (gluten free, if needed)
¼ tsp (1 mL) salt
pinch ground cinnamon
Syrup
½ cup (125 mL) blood orange juices (about 2 oranges)
½ cup (100 g) granulated sugar (caster sugar)
Directions
1. Preheat the oven to 350 F (180 C) and grease a 9-inch (23 cm) springform pan.
2. Heat the milk and butter until the butter has melted and pour this over the cornmeal in a large mixing bowl, whisking while adding (it will thicken up quickly.) Whisk in the sugar and add the eggs one at a time, whisking after each addition. Stir in the zest.
3. In a separate bowl, stir the ground almond with the baking powder, salt & cinnamon and add this to the batter, stirring until blended. Pour the batter into the prepared pan and bake for about 45 minutes, until a tester inserted in the centre of the cake comes out clean.
4. To make the syrup, bring the blood orange juice and sugar to a full boil. While the cake is still hot from the oven, poke holes in it with a skewer and then spoon the syrup over the cake (it will soak in quickly). Allow the cake to cool to room temperature before serving.
The cake will keep, well-wrapped, at room temperature for 3 days.

I made this and in the end i soaked the cake with orange juice that i heated with orange peel,no sugar , it was just wonderful ❤
Very good idea to skip the sugar to soak the cake. Otherwise I’m thinking to reduce the amount of sugar in the preparation and use it at the end. Thanks
I live in England and went to a tea room and had an orange and polenta cake. It was so delicious that I looked for that recipe everywhere! Found it but different from what you made and not too good. Had to cook the oranges etc...so I am so looking forward to try your recipe. It will be the first one.. Thank you for demonstrating it so well and simple.

Hi Anna. I made this recipe the other day. The cornmeal and almond flour are perfect. Used naval oranges. The cake is much lighter than I thought. Added two tsp of orange liquor to the syrup and some of the rind. The glazing was perfect.

I love this recipe and so do my friends and family. After making it several times, i just cut the sugar back to 2/3 in the batter and 1/3 in the syrup. Still incredible.

How to clean them
I just finish making this cake and it was phenomenal! the texture is delicious I made a couple of changes. I wanted to make it dairy free as well as gluten free so I substituted almond milk for the regular milk . I also reduced the sugar to a little under 3/4 and used regular oranges because I did not have the blood oranges otherwise this recipe is a keeper thank you

I made this today and it came out really good!. The glaze was the star. I used caster sugar for both the cake and the glaze. I am so glad I have a wall oven. I actually have three ovens in my kitchen.

I do not have a spring form pan. I used a regular one, greased it very well with butter and put baking paper as well. The cake came out easily.
I've tried it this morning super delicious but it took me 500ml of milk 250ml wasn't quite enough and less sugar 175g for the cake and 50g for the syrup. Thanks for sharing.

Just tried this and it is the most yum orange cake I've ever had!! I don't have a gluten allergy but I prefer the texture of the cornmeal for this cake any day!!
I baked it vegan so had to use 3 vegan eggs, 1/4 cup of applesauce and only 1/2 cup of almond meal to match the consistency! It came out great!!
Note, outside North America, cornmeal is basically called polenta.

Pro tip to extract all the flavor from the orange zest: mix it with granulated sugar and rub it in, very throughly. Give it a nice hard massage in the sugar. The sugar crystals will break the zest’s cells and they will release all the aromatic compounds. Also, your kitchen will smell of orange for a while, which is nice

Made this cake yesterday, it was so easy and yummy, I had without the syrup and with it , personally I preferred the non syrup one
How do you know you prefer the non syrup one? Did you bake it twice?
@@acebaker3623 yes I made two versions, the one with syrup was way too sweet for me, I just don’t like overly sweet cakes, also, when I made it again a couple weeks later I used less sugar and it was good as well, so if you don’t like cakes on the sweeter side try without the syrup first, either way it was delicious

A great cake. My first Orange Polenta Cake (I've made lemon ones before and they've been a bit dry without syrup) and, because I only had 8" round cake tins (the standard size here in the UK) I used my 8" square silicon cake pan for the first time. It turned out perfectly, although I turned the cake out before brushing on the syrup, because I was worried the finished cake would be too moist to turn out of silicon. Thanks for another enjoyable recipe.

This looks so wonderful! I think I will replace the sugar with monk fruit sweetener and use my homemade almond milk instead of milk.
me too i do not like the idea to use sugar either , maybe gave or honey instead of sugar of just without sugar
What's the outcome with monk fruit sweetener? I find that monkfruit sweetener can't dissolve well.
The best orange Cake.
The semolina and almond meal remind me of Sugee cake which is popular with Eurasians in Singapore and Malaysia
Substitute the sugar with fructose. And put some whipped cream on top! Maybe some nuts and glazed orange slices too. Perfect Birthday Cake for Winter.
Really nice and grainy. Will add chia flour for the eggs. And orange is a good flavour. I also like a bit bitterness of grapefruit. Its skin is jammed w maple syrup and agar agar&pectin. Delicious on toast !
