In New England, the fish in "Fish and Chips" will usually be cod or haddock. Unfortunately, the traditional family-owned [English and Irish], "Fridays Only" Fish and Chips shops have mostly disappeared. There was a time when they were everywhere in New England. The traditional shops always wrapped the fish and chips in newsprint, i.e. wrapping paper cut from the remnants of the giant rolls used to print newspapers. If you arrived early enough, there would also be freshly made Cole Slaw and large kosher dill pickle wedges to go along.
I had only ever had fish and chips made with cod before I visited the Pacific Northwest. Then I stopped at a Farmers market in Olympia Washington and got the fish and chips for lunch and they told me the fish came from halibut caught just that morning in the Puget Sound. Best fish and chips Ive ever tasted in my life.
Cod & Halibut are both great white-fishes, very tasty! I'd take either any day of the week. A good seared or sauteed salmon is also delicious. A bit more fishy, but delicious, if you like the strong salmon flavor. Yum!

The day of the trip, Cook Inet was as smooth as glass and a perfect 70 degrees.

Word was passed down the line that they were out of chips. A discussion ensued about how disappointing it would be to get the fish but no chips. Luckily when it was our turn, chips were available again. The newspaper was rolled up in a cone shape with the fish and chips in the cone. It made it very convenient to walk around the festival while eating the fish and chips.
The wrapping the fish is a England style fish and chips hear in Canada. The newspaper sucks up the grease, but also holds in the steam. if you do not eat right away, your battered fish goes soggy.
If you come to America and try an American version of a dish that's considered a delicacy in your home country, and you come away calling it a draw, as far as I'm concerned that's a major compliment.
Being from the the center of the Great Lakes region (Michigan), fish and chips is a staple here. The best is when you go up north (what we call the Upper Peninsula of Michigan) and the fisherman bring in fresh catch that morning, drop it off at the restaurants across the street, and then they make your fish and chips with literally just caught fish. Doesn't matter where on the globe you are from, it seems fish and chips is universally loved by many!
Same in coastal California. Find a restaurant on a pier that unloads the fish right off the boat and the fish n chips are light years better than frozen fish.😊

I've also had battered fish where the underside of the batter is creamy like you were saying but sometimes it can get almost gummy. The American in me is showing through because I like it crispy, all the way through.
I do love me some PNW fish and chips. There's a place up in the northwest corner of Washington that does Indian spiced fish and chips. It's glorious. Everyone should do that.

Halibut is basically like flounder. It’s a flat fish that’s pretty much everywhere. Halibut are known to be aggressive fighters, there’s a rule of kill the halibut before it gets on deck as they can cause serious injury to the crew. Flounder is the more tame of the flatfish as they don’t fight as bad and is abundant. The way to tell the difference is which is the dominant eye that is on top. Left is flounder, right is halibut. Halibut is also a cold water fish, flounder is a warm water fish.
Halibut taste nothing like flounder and the texture is not like flounder. Halibut is a cold water fish flounder is a warm water fish, halibut gets much larger and is a lot denser meat. Flounder is flaky. They are not found in the same Waters.

OMG! Bow Picker has the BEST Fish & Chips in the world!!!! The medical office I worked at was on 15th Street only 1 block from Bow Picker. It was a once a week lunch I'd enjoy. ❤ Side note usually BowPicker serves Tuna not Halibut. I sure miss that place since moving to AZ.

Back in the eighties, there used to be a fast food chain that did fish and chips, called Arthur Treacher's. I only ate there once and was a kid at the time, so I have really no idea whether their food was any good or not; but I remember that that's how I learned about the British meaning of the word "chips".
We have a place here called Five Guys and it's very similar to what Sam was explaining, they make fresh piping hot fries and throw a scoop of them in a bag they then wrap your burger in tin foil and throw that on top of the fries followed by another huge scoop of fries on top of the burger or hot dog and seal the bag. When you open it the fries are just exploding all over the place.
Problem with fries in a bag is that a lot of times it ends up "steaming" the fries and they come out moist/soggy, and don't have the nice crisp "bite" to them... Nothing worse than a soggy fry, IMO.

I lived in Astoria for about 6 months. Problem was, it was the nasty season of cold and rain for 5 months! Left in early June, when it was starting to get nice. There used to be a Job Corp Center just outside of town, i worked at for 5 months.
Halibut in my opinion is the best tasting white fish , nice and flakey. Here in Washington I usually have to go 20-25 miles out from Neah Bay to catch halibut and it's usually a 1 month season till the count comes in it might open a couple more days. We get limits real quick if you want 25 - 30 pounds.
What kind of fish you get - if you want fresh-caught - depends a lot on where in the US you are. New England - cod; Florida - red snapper; Pacific NW - halibut. My Pop fished, so we ate lots of fish not available commercially. Florida - grouper [related to the garupa in Indonesia]. St. Lawrence River - Great Northern Pike. Canada - muskie [muskellunge] - we had 27 people for dinner when Pop brought home a muskie, minimum legal weight to catch there was 30 pounds, and his was 33. Yellow perch is really nice. Sportfishing and fix it up yourself gets you some of the best fish imaginable.

If I'm not mistaken, I think you said it's halibut? It's a really mild tasting fish. I'm not a huge fan of many white fish because most are so mild tasting. I personally prefer red snapper because you can taste fish. I can hear the crunch and it really does look delicious though.
I worked on small cruise ships for 11 years. In the spring and fall we would do week long tours up and down the Columbia and Snake Rivers putting us in Astoria once a week. Every time we docked in Astoria I would eat there at the Bowpicker. I absolutely loved that place. Glad you enjoyed it also.
It's probably too late for the NZ family but if you visit Seattle you should try something great that's typical to Seattle and Honolulu: Teriyaki. I didn't realize that it's not available all over America. Seattle has a Teriyaki joint in every town. Just order the basic Teriyaki Chicken. It's sliced thigh meat grilled/blackened in Teriyaki sauce over rice. It should come with a simple iceberg salad with a trademark dressing which is a mix of mayo and roasted sesame oil.

I normally have haddock or cod, however when I make my own it's normally perch or pike 😋I love that you not only share your experiences with the whole family, but sometimes viewers/fells NZers. In Winchester Bay, we had a floating boat in the harbor that served food, so you ate on the water, it was a popular place, unfortunately it closed, looked a lot like that one
The tartar sauce can make or break your fish and chips dish. There are places that use newspapers for wrapping the F&C. Do New Zealanders use a sauce on their fish.
Halibut is one of my most favorite fish, not breaded or fried. Baked with butter and dill, simple and delicious. Walleye is another favorite and is only found in North America - no place else on earth.
It's crazy how universal fish and chips are in the english world, yet so wildly different. England sticks with Cod and Haddock and wraps it in newspaper. NZ is mostly Red Snapper, Great Lakes region of the US is all lake fish, while the coastal regions are more Cod. And they are each so good!
I think north Atlantic cod is the best for fish and chips. Funny thing about Bumblebee tuna. During the pandemic it was practically impossible to get tuna cat food so I had to buy human grade tuna for a picky cat. She would eat Chicken of the Sea, but wouldn't touch Bumblebee tuna.
Halibut from the icy cold water of the northern Pacific waters, and russet potatoes from eastern Washington, is a perfect pair. Chowder from Ivars in Washington is yum.
Went on a business with a bunch of others (80-85) and the people that brought had engine parts plants and that what we was there to look at. Got to Bradford and it was one of our free nights on food. I got the idea of fish & chips.. seems about 1/2 went to this Mom and Pop shop, made their day. Kept the taxi drivers happy as well taking people back and forth. Great food and dang nice people.

Yes I think you need to try other fish and chip places. Some are better than others. We had a place where I live that had the best tarter sauce. I hate tarters sauce. The fish was good, too. But it was a treat. Because the place was always busy and didn't have much parking. Then they closed the place 😢.

Haddock is WAYYYYY less common on the West Coast, it can still be found but its not an easy fish to come by over here

Here in New England ( Massachusetts) fish & Chips are made with Cod fish, not halibut fish .
When I’m in NZ, I get homesick for the American fish and chips and when I’m in America, I get homesick for the NZ variety.
I have not been in Puerto Rico but I followed a recipe I found online for Pescado en Mojo Isleño which called for red snapper and was delicious.
If you like red snapper you should try blackened redfish.

Whenever I order fish and chips here I order the fish well done, it crisps up the batter and you get less of that sogginess internally and doesn’t seem to over cook the fish generally speaking.
We had a couple fish and chip chains in the States decades ago. When you find yourselves in Ohio, look for Arthur Treacher's Fish and Chips. I have no idea if it tastes the same as it did in the 1980s.. when I worked there and they had thousands of locations. There is only 1 left now.

My great great uncle was a fish a monger in wales , indeed we had fish and chips with vinegar and wrapped with newspapers .
I lived in Astoria for about 6 months. Problem was, it was the nasty season of cold and rain for 5 months! Left in early June, when it was starting to get nice. There used to be a Job Corp Center just outside of town, i worked at for 5 months.

Halibut in my opinion is the best tasting white fish , nice and flakey. Here in Washington I usually have to go 20-25 miles out from Neah Bay to catch halibut and it's usually a 1 month season till the count comes in it might open a couple more days. We get limits real quick if you want 25 - 30 pounds.
What kind of fish you get - if you want fresh-caught - depends a lot on where in the US you are. New England - cod; Florida - red snapper; Pacific NW - halibut. My Pop fished, so we ate lots of fish not available commercially. Florida - grouper [related to the garupa in Indonesia]. St. Lawrence River - Great Northern Pike. Canada - muskie [muskellunge] - we had 27 people for dinner when Pop brought home a muskie, minimum legal weight to catch there was 30 pounds, and his was 33. Yellow perch is really nice. Sportfishing and fix it up yourself gets you some of the best fish imaginable.

If I'm not mistaken, I think you said it's halibut? It's a really mild tasting fish. I'm not a huge fan of many white fish because most are so mild tasting. I personally prefer red snapper because you can taste fish. I can hear the crunch and it really does look delicious though.
I worked on small cruise ships for 11 years. In the spring and fall we would do week long tours up and down the Columbia and Snake Rivers putting us in Astoria once a week. Every time we docked in Astoria I would eat there at the Bowpicker. I absolutely loved that place. Glad you enjoyed it also.

It's probably too late for the NZ family but if you visit Seattle you should try something great that's typical to Seattle and Honolulu: Teriyaki. I didn't realize that it's not available all over America. Seattle has a Teriyaki joint in every town. Just order the basic Teriyaki Chicken. It's sliced thigh meat grilled/blackened in Teriyaki sauce over rice. It should come with a simple iceberg salad with a trademark dressing which is a mix of mayo and roasted sesame oil.
I love fish and chips, they're soooo good. I normally have haddock or cod, however when I make my own it's normally perch or pike 😋I love that you not only share your experiences with the whole family, but sometimes viewers/fells NZers. Keep doing what you do and who knows maybe you'll explore Canada, I'd love to show you around parts of Ontario.

The tartar sauce can make or break your fish and chips dish. There are places that use newspapers for wrapping the F&C. Do New Zealanders use a sauce on their fish.
Halibut is one of my most favorite fish, not breaded or fried. Baked with butter and dill, simple and delicious. Walleye is another favorite and is only found in North America - no place else on earth.
Red snapper is my favorite fish so I'd probably love N.Z. better too

It's crazy how universal fish and chips are in the english world, yet so wildly different. England sticks with Cod and Haddock and wraps it in newspaper. NZ is mostly Red Snapper, Great Lakes region of the US is all lake fish, while the coastal regions are more Cod. And they are each so good!

I think north Atlantic cod is the best for fish and chips. Funny thing about Bumblebee tuna. During the pandemic it was practically impossible to get tuna cat food so I had to buy human grade tuna for a picky cat. She would eat Chicken of the Sea, but wouldn't touch Bumblebee tuna.
Halibut from the icy cold water of the northern Pacific waters, and russet potatoes from eastern Washington, is a perfect pair. Chowder from Ivars in Washington is yum.

Went on a business with a bunch of others (80-85) and the people that brought had engine parts plants and that what we was there to look at. Got to Bradford and it was one of our free nights on food. I got the idea of fish & chips.. seems about 1/2 went to this Mom and Pop shop, made their day. Kept the taxi drivers happy as well taking people back and forth. Great food and dang nice people.
Had halibut fish n chips in Vancouver BC. Best ever.

Great video!! We live just north of there (Long Beach Washington) and we love Bowpickers! Also, we also thought Bowpickers used halibut, it’s actually albacore tuna!!😱😄

Yes I think you need to try other fish and chip places. Some are better than others. We had a place where I live that had the best tarter sauce. I hate tarters sauce. The fish was good, too. But it was a treat. Because the place was always busy and didn't have much parking. Then they closed the place 😢.

You should try to find a place that uses cod, another popular fish used for fish and chips. Cod is a staple in the northeast, at least.
