To steam a bit, I use baby corn in the can. I discard the water and cut up the baby corn into smaller pieces but they still have a decent amount of moisture on them. I put this and the sliced up carrot in the wok and close the lid. This gets the carrot soft but still stays crispy. I do my broccoli first. I put in the veg oil and in bunches I do my broccoli. I do not do garlic because it burned and I had to toss a lot of my vegetable out because it tasted bitter. Since I have a sauce recipe I add that at the end. I put everything in the wok, the broccoli, carrot, baby corn and snow peas and make a well, add the sauce and turn the flame UP. The corn starch makes it thick and it sticks to the food. Comes out great. Your videos and advice have helped me. For sauce, I do cold water and mix in corn starch give a good stir. I then add soy sauce and hoison sauce and REALLY stir. For a small container of food I use 1/4 cup of liquid and one level tbsp of corn starch but I do a LOT so I do one half of liquid and heaping tbsp of corn starch. When I first started doing this, my veggies came out wilted but I learned to do it so that they come out crispy. It's a learning curve...

I'm high as sh:t right now but I pretty much clicked on this video only because you look like the stereotypical super nice, quiet, wise older Asian guy that turns out to be an alien warning us of the apocalypse from like every American sci-fi movie... but now I'm actually going to start making stir-fries more often because I feel like I've been doing it all wrong!
