- Niouk Yen are steamed dumplings made with grated chayotes & can be served with dipping sauce or broth.

For 38 Niouk Yen
Ingredients:
8 Chayotes
25 g Dried Shrimps
3 Whole Shiitake Mushrooms
20 g Rice Vermicelli (Optional)
100 - 120 g Tapioca Starch (2 TBSP per chayote)
2 TBSP Fish Sauce (can substitute with light soy sauce)
Sesame Oil (optional - add flavours)
Spring onion to garnish
For the Sauce:
1/3 Cup Light Soy sauce (low in sodium)
1 TSP Lime Juice
1 Garlic Clove
2 TSP Sugar
1/4 TSP Sesame oil
1/4 TSP Sesame seeds
1 TBSP Spring Onion
Note:
For 8 Chayotes, after grating and squeezing the water, we got around 555 g.
The amount of Tapioca starch will depend on the moisture of the mixture and also the size of the chayotes.
There are a lot of varieties of Niouk yen, you can also add minced half cooked meat or make it vegetarian.

Yes, you can make a vegetarian version, shrimp and mushroom can be substitute with soya and daikon (rave). What do you mean by variation process?

Salt is only added to draw out the water and not for seasoning. The amount of fish sauce may vary depending on your taste (fish sauce can also be substitute with light soy sauce-low in sodium). They can be accompanied with the dipping sauce, broth or on their own. So depending which way you prefer to have them, you can adjust the amount of sauce.

Wow..merci 😊 pour que les boulettes tiennent, il vous faut mettre le vermicelle de riz, car il absorbe l'exces d'eau. Faites un essai avec une boulette en premier puis vous allez ajuster par la suite (s'il faut ajouter plus de tapioca, vermicelle de riz etc...) 🤗

Niouk yen means meat ball. Where is the meat?
Niouk yen means meat ball in Hakka, however most Mauritians know Niouk Yen as boulette chouchou and without meat..this recipe has so many variations and we did mention this in the video description... though ours doesn't have meat, feel free to add some from your end 🤗 thanks for watching 😊😊
