Nami did have a dream. It was the hope that she could buy back her village and that Arlong would keep his word. The dream she worked so long and hard on was stolen from her. Luffy put his straw hat on Nami to symbolize that she is one of them a straw hat pirate.
There’s a theme to her of how you might not be able to say what your dream is, too; first was her poverty making her general desire for a better life infeasible, second was Arlong’s oppression putting her into a position of dedication to nothing but liberation of her village at her own expense… Then Lucy comes in to show she can finally be honest about her passion - we see her love for cartography that’s been perverted by Arlong, which Nami should be allowed to express honestly.

Luffy didn't know what was going on with Nami, her town, or it's people. All he knew is that she asked for help.
And with that, Luffy was on his way to kick some serious ass.
I am pretty sure the only reason Luffy wasn't helping was because she specifically told him to stay out of it. Same as when Zoro told Luffy to stay out of the fight with Mihawk. He was just waiting for her to give him the green light or finish on her own.
In the anime there is an overarching theme of Justice with the marines. Each marine interprets “Justice” differently. To Bellemere, Justice meant being an honest caring person. Which is why she doesn’t lie about her children. It would betray who she was at her core. Her sacrifice saves her children and she dies with her integrity intact.
To contrast Bellemere with Arlong, who cares nothing for justice despite his rhetoric here (killing her is nothing but spite, as opposed to actually using her as a resource); the way they change him here is still consistent with the manga/anime fact that he’s a glorified thug and bully. He puts humans beneath him just to feel powerful; Bellmere has honesty and integrity, and she does what she can to be a mother to Nami and Nojiko (and the fact she might have seen their parents dead is a valid interpretation).
one interesting thing about arlong that isn’t as clear in the live action is that he’s actually the first villain to genuinely care about his crew! in the anime/manga, whenever his crew mates are injured he shows legitimate concern, and hurting any of his men is the quickest way to send him flying into a rage. so arlong, in his own way, absolutely has principles and a code of honour - it’s just that it doesn’t apply to humans.

Thanks for reacting to this series. I'm a long-time fan of the anime, and always glad to see this amazing story get new fans. Good on you for noticing how Luffy called for meat! If the live-action series follows suit with the source material, I assure you that will be a running joke.
Nezumi's hat and whiskers were most certainly meant to make him resemble a rodent. After all, 'nezumi' means mouse in Japanese. Also, the same word can be used for 'rat'. I can't confirm whether Oda-sensei meant to associate his name with his corrupt nature, but it's an interesting coincidence.
And no, the One Piece will definitely not be found next episode. Even after 1000 anime episodes, that treasure hasn't been discovered yet. It's not easy to find, and you have to know how to look for it. There's a lot of story yet to come.
