In todays video we're going to be comparing 4 Petty knives from 90mm up to 180mm on a series of tasks to see whats best for what, and if we could only take one to do all of these tasks what the best all arounder is!

Actually i have 135, 160, but I’m curious to see a petty 180, that reached the size of bunka or santoku… for me the perfect fit of petty is 160 on my experience and at work I may say… have a great day guys
@@kingvillegas2914 The solution is MORE KNIVES!
The 150mm blade is the sweet spot for a board knife for me but, smaller people will likely prefer 135mm blades. The 180mm blade works but, tip control & power are compromised for no good reason.
The perfect length is 133.7 mm.
As a professional Chef, I typically do everything with my longer Kiritsuke/Gyuto's - though I'll reach for my petty's on occasion, just to use them for fun, and when I do, I have a 75mm & 150mm to choose from - typically, I use my 75mm for traditional tasks a paring knife would accomplish, and my 150mm to process game (which you would typically reach for a Honsuki or Deba), so yea, go figure!?!?!

Gage and Jake, I thought this was the most informative video you guys have done yet! Seeing the comparison of how the blades worked and Gage's running commentary added a lot of value (especially for me) as you demonstrated on the chicken and veg which is what I use most. I will probably get the 180 mm petty, as that is what I am in the market for.
Is it a slicer? Is it a petty? Who cares they're awesome and I want one too!

I’ve been looking at Petty’s for the last week so I was stoked this popped up in my feed. I grabbed a Saji 150mm Rainbow right after watching this and feel better about the size, I was definitely leaning towards a 120mm when I was browsing so appreciate your insight to help make a final decision!

Thanks for this video! I've been agonizing over what kind of petty to get and I think I've narrowed it down the middle ground... I'll have to come in and "try on" a bunch of 120-150mm models!

I think its important to distinguish “Sanjo” knives vs “normal westerns, or like “sakai” knives. A 180 in most western knives and sakai the heel height will come out to like 31-33TOPS. This kind of 180 feels much different than the counterpart Sanjo knives with heel height of 36-38. I find I don’t need a Santoku/bunka/nakiri in my line up when I have a 180 Sanjo pettty. It has just enough clearance to work on the board for smaller tasks (citrus/potato/radish/eggs/tomato/cucumber/etc,etc,etc). Anything else that is bigger I need a bigger knife, i move to my 270. I prefer 270 over 240 for efficiency. Please note this is for work setting. At home setting id probably just recommend a 240/150 combo.
Fun video. Lots of technique on display too and I like Gage's paradigm shift. I use a 165 petty a lot and strongly believe 180 gytuos are under rated.

I think that a good blade height is also very important in the petty territory. All in all great video !

I personally find blade height matters much more than length when it comes to petty knives.
I have a 150 thats really slicy and slender and it feels like less knife in the hand and so agile compared to both my 170 bunka and the knives of my roomates
180 is basically a petite gyutoh and a 90 is a paring which i think its best to use a sheeps foot paring. 125-130 is the sweet spot for petty for utility.
I used to see them as mini slicers, but the more I use em, the more I like em and realize I don't always want a shorter knife, just a shallower one!

I have a pair of 5" "chef's" knives and a 6" version as well. I also have a pair of "regular" 8" chef's knives. 4 of the 5 are from Victorinox. None are Japanese in design, though I like the Japanese designs. I'd have to be dissatisfied with my current knives to buy more/different ones, and I'm not dissatisfied. After a couple years, I've found I like the 5" "petty" knives the best. I keep them sharp, and have been pleasantly surprised by their versatility.
I’m looking to buy the 135 mm and the 90 mm for my first Japanese knives. It would be cool to meet the staff in the Toronto location sometime, but I think I’ll be ordering.
If possible we always recommend coming in if you can. Not only would we love to meet our viewers/customers, but we find that handling a bunch of knives what you think you'll like isn't always what you like in person!

You're making me feel better about my Motokyuuichi that I ordered. I wasn't paying attention to the length, and when I realized it was that long, I was a little unsure. Can't wait till Christmas when I get to use it! It'll compete a bit more with the Hatsukokoro bunka that I ordered with it.
It took me a while to come around to the larger pettys as well, I've played with the 180s and love them, but decided to bite the bullet and buy a 150 when I was working professionally so I could handle a little more butchery, and I'm to this day glad that I got a larger sized petty. I'd really like a 180 some time soon!

It was logical to me to get a 120 mm petty as a third knife, because I already had a 240 gyuto and a 180 bunka. I wanted the pettys size to be distinguished enough from the bunkas, but 90 mm is a toothpick. I also use a peeler for peeling so... :D
Anyways I got a Yu Kurosaki Fujin SG2 Petty 120 mm and its awesome, but sadly I think I'm a big knife lover :') I love that the blade is 30 mm tall and there's a little more angle between the edge and the handle than usual . This gives just enough knuckle clearence while gripping the handle, which is rare in this size range.
Still if I could start over I'd get a 240 Kiritsuke and a 135 or 150 Petty and be done with two knife.
Gage, when you were naming the knives, were you reading the Kanji?
Max Petty knife length IMO is 135mm. 180-165mm Santoku (with a good tip) or Bunka can do general nimble cutting and tip works.
135 I find is the most neutral petty size!
In my head I’m like… why would i want a bulky 50-53mm height 165-180 when I can have a petty and have JUST enough board clearance and be slimmer profile on the board. Just my thoughts to that.
140 mm is the sweet spot. but I also like to have a good 135 and a 150. but. I have too many petty knives. Smallest is 100 mm and the largest is 160, maybe 165.
I have never been a big fan of large knives... they're a bit overwhelming for me. As a result I have a 180mm Gyuto (Takamura Tsuchime) and a Nakiri. Those two cover 95% of what I do. That said, because I have the itch I am looking for something to get me a bit closer for the fine detail work (trimming broccoli, mincing garlic...). I'll already use my gyuto for breaking down chicken, carrots, onions....
You didn't do a 120, but do you speculate any major difference in those two lengths?

I personally still mince garlic with my larger board knives, usually my gyuto, and don't feel like 120 is the most comfortable to work on the edge of the board. I really do like my 150 for trimming broccoli though!

Depends on the kind of stuff you're doing with it! I've been using my trusty 150mm petty beside my santoku, gyutos, and slicers for a long time without any issues. Mines quite shallow, which makes it a great butchery knife and for more detailed work. The petty thats right for you depends on what you intend to do with it, not what else is in your kit!
I think 2 petty knives is best
A 150/90. But if its one knife, a Tall 135 is perfect. Hinoura

I have that one of those Shegeki Tanaka 150mm petty and it's a great little knife for when my 240 gyuto is overkill. Great for when I am mincing a bunch of garlic or if I need to dice only a single onion. It's stainless too so when I need to slice limes for cocktails I dont have to worry too hard about leaving it on the board for a while. If you want a petty that you'll primarily use on the board, 150mm is the way to go in my opinion.
I'm on #team150 as well, been in my kit since the ol' restaurant days!

Thanks for confirming my choice of the 150mm. Just a suggestion: next time you butcher the chicken it is easier to cut the breasts away and you end up with two halves. It is much more stable and won’t roll. Thanks for the video!!

Testing knives for a few years now. I can make anything I suspect will work. Unless you are carving meats those knives are not tall enough in the front. Taller knives near the tip are easier to guide & easier to move food with.
There is no real excuse for any knife made to be used on a cutting board pinching your fingers. Why do reviewers continue to ignore or make excuses for poor knife handle designs instead of calling them out ?
Well, if you are referring to the knives in this video, they're not really all made for on the board. The 150/180 can be used on board but really still more in hybrid territory I'd say.
If we're talking about other reviewers, I'd say that sponsorship money can make a lot of people say a lot of things they don't mean!
