    For anyone wondering, the plastic bases on Naniwa Chosera stones are very easily removed with a heat gun and a couple of butter knives, with zero damage to the stone. I've removed them from my 400, 800 and 2000 grit stones. Heat the base until the adhesive is soft enough to slide in the butter knives and use them to slowly pry free the stone. It's that easy, and only takes a few minutes.

    As someone who sharpens and trains people on doing so for a living, this is incredibly well done and very informative. I'd have enjoyed seeing more stones in the lineup but I'm impresses nonetheless. Very well done!

    I believe that "likes" increase the chance that the video will be higher up in the search results, so they can help the vlogger get more exposure.

      This is a bit "misleading." You do get a small "boost" in interactivity, but no where near as much as amount of comments, viewer retention, how many videos are seen in a time frame, and subscriber count. This is why a lot of YTers push giveaways through comments or close their video with a question (Such as, Tell me what you guys want to see more of" or "What do you think about X or Y? Comment below!)
      What "Likes/Dislikes" do is help the system personalize and prioritize a person's tastes for later use and not a general metric of exposure.
      For instance,; let's say I watch a 20 minute video about a baking show because I like that specific show. YT then says "this guy likes baking" and pushes a ton of baking channels. Now, I will most likely skip over these videos and channels because I have no interest, so me "disliking" them would put them on a lower priority of when I search, but nothing for "unexposed audiences."
      When I "like" another video of the same baking show, it starts to push videos related to that show (And not just baking) to push them up on searches.
      YT also considers most subscribers as them "auto-Liking" a content creator's videos. This is unaffected if the subscriber "dislikes" the video as it could be just a criticism of the video and not the content creator as a whole, just that video has a lower priority if I choose to search for it using related tags. Again, it's not seen as a big deal because subscribers receive notifications and have quick access to your channel.
      So if you want a channel to grow by the algorithms standards; the important thing is engagement through retention and comments/interactivity. If I watch a 10 minute video of a knife unboxing followed by 60 minute video of Whetstones, subscribing, and leaving a comment: that's going to be far more beneficial than if someone stumbles upon a video and just leaves a like after watching 2 minutes. This is why creators are now saying that reminder to leave a like at the end of the video instead of, previously, which was the beginning. That retention is far more important and the "like" is if they want to see more content similar to it.

    Hey Ryky! Happy holiday and Thank you again for the awesome video, very informative as always. It’s the holiday season and I’m looking to invest in another stone. I have a Misono UX Gyuto and Slicer, and currently sharpening on a 800 grit Naniwa Chosera probably once per week. Would it be better to invest in a 3000 grit or 1000 grit stone, or even both? OR a 1000/6000 king combo stone? So many stones, so many options- any advice would be appreciated. Thank you

    Agree 100% with you on the Chosera 3000, it's a magic stone. Satys flat forever, doesnt wear down, produces allot of metal residue FAST, doesn't load up, big, heavy... It's amazing, a great finisher for most "everyday uses". Trully can't understand why Naniwa, or any brand for the matter, simply cannot come close to the quality of this synthethic stone not how Naniwa can't make the same with their other Chosera grits... The only stones that come close to me are the Chosera Glass (Kramer) 1000 and the 5000 (which comes pretty close and reminds me allot of the Chosera 3000). I just don't know if it's actually suited for sharpening, actual sharpening of a dull (not heavily chiped or anything, but really dull from normal usage) knife. Think you could make a video about the Chosera 3000 only and show how sharpen a dull hard knife using only the Chosera 3000, please? Also, it's your favorite stone, it deserver a video only for itself. Thanks.

    Can you review a King Hyper 1000? The harder one. I’ve heard a lot of positive reviews and feedback about it, some saying it’s better than the Cerax 1k. I’m curious if this is true. If you can, I’d appreciate it, if not, I understand. Keep up the great channel!

    Thanks so much for making this video. It is thorough and well presented, and about as free of useless biases as possible. I have only begun sharpening chisels, axes, kitchen knives and other folding and fixed blade knives over the past year. In my limited experience, I have a beginning understanding of the differences in feel and feedback that you mention between various stones. Thanks for explaining the reasons for what I was sensing. You've encouraged me to learn more. Thanks again!

I'm planing to buy some stones and it will probably be my first and last stones in entire my life so Im going straight for question since i think (cheap man pays twice). What stones to chose? how many I should have in my set? I wish to sharpen professional scissors and kitchen knifes..

    My stones are all about 10”x3”x1+” and I enjoy starting at 320 then 400, 800, 1200, 2000, 3000, 5000, 8000, 12,000 grits. All water stones. After learning to sharpen over two years and enjoying your dedication to the art form of sharpening I am addicted to your channel. I watch it as I get up at 0400 and spend the first 4 hours of my day sharpening tool blades and on weekends-kitchen knives..(happy wife, happy life)... my latest addition is a late 1800’s sandstone peddle powered 30”D Sharpening wheel for my tools.

    Well before finding your videos I got a sharp pebble 1000/6000 combo kit and then also got a KDS king combo 1000/6000 combo. Also got a leather pad for stripping and after this video I got the erasers.
    I know they're all budget stuff but it's a good start
    Playing and practicing with an OXO good grips chef knife before using them on my nicer forged knives

    why did you neglect to list the king KDS 1000/6000 in your review when you put it against the arashiyama which you also seemed to neglect to mention? Im just curious as im leaning towards the king KDS 1000/6000 but now im unsure again, im looking for something that can get a good edge while still being budget friendly

      Norton India stone and leather strop. Whole setup for less than $50 and will give you just as good of edges. Need to flatten it about every 10 years.

    I remember one night after a punishing à la carte service in the high season (+300 hours that month) I finished up my station and brought out my sharpening stones. The satisfaction of putting a mirror polish on my trusty knives with the Kitayama 8000 is so soothing. It really eases the stress common in the industry.       Soft stone that works better on carbon steel than stainless. Doesn't leave a very sharp edge on it's own in most cases but it's a great stone to prep an edge for a micro bevel or something. It has the ability to polish very well and is very muddy so it doesn't produce much of a burr. It can be kind of a frustrating stone to figure out IMO.

    I have used the Imanishi Tamago 4000, it pretty nice stone and if you ask the oddball of finishing the knife at the 3K-4K stone, I think it is useful for boning knife and knife that main purpose is for cutting fat and muscle. because highly polish knife don't cut as well as those finish knife that finishes around 3K.

    I was thinking for my first whetstones now a set of soaking Suehiro Cerax 320, 1000 and Rika 5000.
    I am currently working with Global Cromova 18 knives and can see myself getting into the hobby to compliment a love of cooking.
    Do you recommend anything higher than the 5000 for getting a beautiful finish, or will the 5000 be just fine?
    I kind of love seeing the "paper cutting tests" and speedy vegetable dicing! I am curious, as I assume a jump from 5000 to 8000 may not be a noticeable difference and noticed your video stopped at 8K. I was orginially wondering if getting a Shapton 12000 would be a good addition as a 4th stone for this set?
    PS - I also ordered your Rolled Buffalo 12" tempered glass premium leather strop (and red, green & black herold paste). So I am not sure if that is something I could use after the 5K instead of a 12K? I haver no experience here!

      I have Kings and Chosera pro, Naniwa Chosera(with base), Naniwa Superstone, Masihiro, Suehiro Cerax, Rika 5000, even Sharp pebble, and Kings stone wear rate is fast compared to all the mentioned stones, yes even the budget Sharp pebble.

      shadyeskimo okay. So what if it wears fast? It cuts fast and ALWAYS has new cutting material. It doesn’t load up, has a great feel, is accurate grit wise, and is a great starter stone and comparison stone.

      I have a King 6000 and it is smelly, also it gouges easily. That being said it is one of the first wetstones I bought and I'm still very happy with it and continue to use it.

    A double cut file is good for a brand new blunt edge. A chefic is great for finishing an edge. Naniwa is great for taking off the big chunks of burr, then i finish with a leather strop.

    Awesome roundup of the whetstone landscape, Ryky! Thanks so much for all your hard work this year. I have only you to thank for this wonderful new hobby. I have been enjoying my setup, all informed by your recommendations, and focusing on the Naniwa Chosera 800 (old style, with base) and the Suehiro Rika 5000. Yes, my wife has shed some blood these past few months, but all were very clean cuts and hopefully she's been better off than she would have with dull knives! (all tongue-in-cheek, BTW. I love my wife very much and wish to limit the harm to the extent possible!)... Happy holidays to you and yours. I'm looking forward to the next year's content.

    nice video! thanks for posting. I like the brick idea. Gotta try that. I have been sharpening on backs of plates for years. the back of ceramic plates works well too if your are at a friend's house cooking and they have horribly dull knifes. takes a minute though

    Cerax 1k, to me, is among the best all around stones on the market. I bought a Chosera 1k to compete and it’s just not as good. Also, at least in the particular Chosera 1k I bought, I had to remove some material off the top to get it going. Felt like plastic on the stone and it wasn’t cutting well so I took my atoma to it for a minute or so. Underneath was the true grit rating so just be aware that you may need to shave a layer off the top.

      Ya learn to work the mud and you can get a really nice 4k Kasumi finish. It is by far my favorite soaking stone

    Just joined the channel and love the videos ... thanks. Wanted to comment that you shouldn't be concerned about the longevity of the Shapton glass stones when flattened often. I bought my glass stones in 2011 to sharpen my hand planes and chisels. I've got about 22 hand-planes and countless chisels (woodworking hobby). The materials sharpened range from super soft vanadium coated steel in my antique planes up to cryogenically treated a2 tool steel (HRC 60-61) in my modern hand-planes. The stones get flattened several times per sharpening session, in other words ... a lot. I use a DMT diamond plate to flatten.. The glass stones are 1000, 4000, 16000. I just measured all three and after all that use they are roughly uniform at or near 4 mm (I subtracted the 5 mm glass). So they have only lost 1 mm in thickness ... awesome stones. That said, I would not recommend them for a beginner. They are too expensive to subject to the inevitable beginners learning mistakes. I bought a set of three Norton stones (the dual grit models) back in the day and they were great to begin on. Anyway, that's my 2 cents. I am going to try a Chosera 800 on your recommendation. Keep up the good work, you're doing a great job!

    I've only tried a very small number of brands for stones but on your recommendation I decided to get the 320 and 1000 grit Suehiro Cerax stones and have to say they are wonderful while also being budget friendly. Still have my King 6000 grit for finishing.

    When you pick up a stone, or knife, or whatever that you're about to discuss, you say the name quickly and I have no idea what you say, usually. It would be nice if the name of each item you pick up and discuss could be displayed in text on the screen at the time you pick it up.

    I am dissatisfied with my NANIWA PROFESSIONAL 5000. It feels rougher than other 3000 grit stones, which is disappointing. I came across your video and completely agree with your opinion. Everything else is fine, but the NANIWA PROFESSIONAL 5000 is genuinely strange. As a result, I hardly use it.

      Shapton Pro or save yourself some money and buy the Ha No Kuromaku version. The 1k is a good stone, probably closer to an 800 in actual practice, and the 5k is a very nice stone IMO. Shaptons give some of the most crisp, scary sharp edges of any stones I've tried and both those stones do their jobs very well. The 2k Shapton is probably my favorite stone in the series, just and excellent stone. The feedback can feel a bit lacking if your used to Naniwas but they feel good enough. I love the performance and feel of chosera stones but the damn things just crack far too often for their price point, it's really infuriating to put that much money into a stone and have it crack during normal use.

    I have over a dozen stones…probably closer to two dozen….but my favorite of all time is my 30,000 grit shapton glass. That level of polish is totally impractical but seeing a bevel reflect light like the arch of the covenant never fails to make me smile. Not to mention it *literally* polishes wood. When I use my chisels and carving knives at 30,000 grit, they actually make the wood SHINE. It’s really impressive.

    I know this is a 6 years old video, but I'd be curious to hear more about the dichotomy of "I've had over 50 sharpenings on this stone without flattening it - this stone is thin which is a problem because you don't have a lot of wear margin". As far as I've understood those Shapton glass stones don't really wear that much either. And occasionally I do hear about the thickness and wear, but then again I never hear about people who have worn down their stone. So do they actually have to be thick and have a lot of wear thickness, or is it just something nice to think about? Like you mentioned "they're selling less for more" while explaining they improved the product and the whetstone was already quite a thick block. What I've understood is that when it comes to whetstones, thickness shouldn't be your priority (even if you're a professional I suppose) rather than the user experience and effectiveness. However I'm not the least bit experienced to have an opinion and that's why I'd like to hear if people actually go through whetstones in a time frame that mandates the talk about how thick the whetstone in question is.
    A lot has probably changed in sharpening community over the years as well, these days I don't hear people talk about how the 2000-4000 grit being useless, but people talk (smartly given how grit approximately means how thin scratch pattern the stones bite into the metal) how you should consider doubling the grit every switch of the stone. So you'd naturally go something like 320-400, 800-1000, 2000-4000, 5000-8000 or so. Obviously picking your favourites and approximating the doubling. Doing a too quick of a jump would most likely lead to working way too long for what you want, it's like skipping a part of the process because someone said "this is sharpening, this is polishing" while those are somewhat arbitrary titles (they have practical meaning but the stones don't follow a title but the physical qualities).
    These days people also seem to talk a lot more about what they find works better for tools and what works for kitchen knives. Or what's forgiving for beginners, being hard and not biting deep into the stone if your technique falters. And obviously splash n go, semi sink and fully sunk stones because even though a professional might not mind it, a casual sharpener might find it very important how much preparing or wetting you need, followed by how messy the stone is and how much do you need to open the surface before it starts working as it should.
    This was also the first time I've heard that the stones don't need to be flattened for kitchen knife sharpening. Usually be it tool people, knife makers, chefs, other sharpeners, they maintain that unless it's a special shape stone, you should keep the stone flat in relation to your use frequency and intensity to maintain a good and predictable performance.

    I have most of the SHAPTON glass stones, all the HRs, all 13. But I still only use my KING stones, the 120, 320 (only stone needed), 1000, 6000 and green strop on Wood not leather. The shaptons just feel kinda wrong, KING is what you want unless you are low on time. If thats the case, just buy a second knife, instead of ceramic stones. The glass stones are still my prized possessions, but they feel more like trophies than sharpening stones. KING WHETSTONES ARE THE WAY.

    All the things you don't like about the super stone is what it's made for! It's slow? It's supposed to be slow, that's called gentle to the edge. It's not made for sharpening ZDP or even SG2 type stuff. Try sharpening carbon steel on it and see how it works. Now you know why it's so popular for straight razor, because unlike something that cuts super fast and aggressive like shpton glass stones, which don't get me wrong are amazing and probably the best splash and go stones in the world for hard abrasion resistant knives, like sg2 steel, even the 16000k cuts far too aggressive for honing a carbon steel straight razor. As far as feel, They feel kind of like rubbery erasers. Hard and smooth with a bit of drag and bit of give. Hard yet soft, kind of like a hard rubber cutting board. It feels hard when you bang on it, but it's soft when you cut into it. I think it's a very interesting option to consider for carbon steel knives or straight razors. A big plus over something like the Choeras is it's actually more like a true splash and go, whereas the choseras feel like hybrids. They say splash and go but they are very very thirsty. Nothing like the shaptons at all.

I have decided to start off reasonably priced since my daughter will be buying me this starter l am going to tell her Naniwa stone holder with a 2 sided 1000 3000 Naniwa super stone. Do you think this is a good choice. I have not started my Japanese knife collection yet

    No love for diamond plates and a little water/alcohol in a spray bottle? 😐 I've used waterstones and love the shapton glass but damn they pricey, but found out i LOVE the Chinese diamond plates from Amazon. Spray em with water and alcohol and they cut fast smooth and stay flat. I do my final hone with a glass nail file surfaced on the 400 grit diamond plate. 15 years pro sharpener of knives to high end hairdressers shears.

    Anyone know the specs of the Felco 903 diamond sharpener please? Grit? Electrobonded. I tried contacting Felco a few times, no response. Asked on their videos and social media. I asked the distributor the grit. Their response was "it's diamond". Well, duh.

    Could it be that the Cerax 700 simply needs a light flattening to expose fresh grits and remove any residual manufacturing surface? It is odd that it has a red tint while the others are all white, I would prefer that companies stick to one basic bond and grit style within a named product line and only change the grit size.
    I have a hunch that the super stones are simply formulated for a different combination of metals and feed speeds(pressure), or maybe for a fluid other than water. Some metals are more likely than others to grip and tear out grit particles exposing fresh peaks, it is a combination of strength, toughness, and slipperyness on the part of the alloy; steel alloys are often rated as difficult or free-machining which is correlated with grinding traits. (The work-hardening high manganese steels used for surfacing railroad junctions or quarry equipment are not too hard on the hRC but can be extremely difficult to grind.)
    This is only based on what I know of industrial abrasive products, the wrong combo of bonding hardness, grit type, and user-process can be very ineffective ether with excessive wear, high heat or slow material removal.(per KW) Usually for a given grit size and type harder bonds are used with higher pressures and feed speeds as there is more force on the grits, but at low pressure these just glaze smooth as no new grit is exposed and high pressure fluid jets need to be aimed into the wheel to both cool and prevent loading, chip welding can be an issue with high speed and pressure grinding; soft bond is used to get faster cutting per unit of power and cooler surface temps as sharp grit is rapidly exposed with light pressure, especially with dry grinding, and chip welding is not an issue but wear is higher.
    The grit sizing of super stones is probably accurate it is just a bonding agent issue, unless they have some none standard wide-range sizing [mix of grit sizes] which is more common with some loose polishing compounds that use friable grit types, though in the case of polish the large grits are meant to break into smaller pieces in the mud under high machine speeds providing a natural progression from large to fine but these are targeted at more specialized high production industrial processes.

I am using a few small Suntiger deluxe water stones one is 1000 the other is 6000.Do you like this brand/stones? i also have a larger king combo stone 250/1000 coming the cheaper one not the professional. I have had a lot of luck filing the edge first as i do have a good file.

    damn first stone 400 / 1000 i got and boom razor sharp, but with a strop and compound (this was from a set similar to LANSKY but not at all, random dude makes these with sanding paper) and it's probably sharper than with that system =)

    I can't agree with the 《Suehiro Rika 5000》,because it's not a real 5000, maybe around 3500. And this whetstone take so long to drink water. It could be a not bad choice in someone's opinon, but not a excellent whetstone, because the two negative aspects i metioned.

    Have you tried the green brick of joy? It would be nice a battle against the chosera 3000. It has an amazing polish and cuts nice. Very soft for my taste but good stone. Do you have a video of it? Naniwa Aotoshi.

    18:10 Naniwa Super stone 1000 sucks. Feedback is terrible for a 1000. I have 6000's that sharpen faster then this. Don't even understand how Naniwa put out such a crappy product out there.

    Good video. I agree on your recommendations. I bought a rika 5000 and at first, I did not like it. But after using it a while I went from not liking it to loving it. I think when you first get this stone you need to "break it in". Also on the Chosera 3000 it needs to be "broken in" as well. At first, the Chosera would load up and I had to keep cleaning it. Now it works great. Lastly, I just purchased a white 8000 as well. I have the kit 8000 and love it. But someone I follow on the straight razor scene, loves the white 8000 you just reviewed. I do not think he has the kit 8000. Once it comes in I will let you know what I think. Lastly, I just bought a shapton pro 12000 for razor sharping. That is one HARD stone. I am not sure about the results yet. I have been using a 140X power microscope on my razors to see the results and the jury is still out. The kit 8000 does a good job but it does not make the razor "shave ready". The stones you did not review was the King 1000 and 6000. I like both of these stones but I agree the Cerax is better. The King 6000 feels similar to the Kit 8000.

    Hey Ryky, your videos/reviews are always fun to watch and really informative. I have a Super Stone 400, 1000 & 5000 and although I'm still fairly new to sharpening and have no experience on other stones, I completely agree with your comments about them. In no way I think you're "bashing" the series, They have good positive sides but their negatives are really blatant. I'm really excited to try other stones in the future!

    I have done some research and thumbs up and thumbs down do help the ranking of videos. What most people don't get is that thumbs down do as much as thumbs up. UA-cam sees the EXTRA interaction a viewer does on a video as meaning it is a video that other people will want to interact with too. They don't care if it's positive or negative, just that people will interact because if they interact with a video they are spending more time on the video (likely) and therefore probably seeing more advertisements and THAT is what drives UA-cam rankings.
    Your channel is worth a lot a thumbs up. Your sharpening inspires me to try harder to do good hand sharpening.

      hmmm...... i would drop either the rika 5k or chosera 3k. you only need one. IF are you planning on getting the 8K for sure, you can drop both, or just get the rika 5K since it's less, and you have the 8K for your mirror polish. make sense?

      Burrfection hi thanks for your reply. I've been watching your videos because I've been sharpening my leather knives and had bad results.
      I already bought the rika and the cerax and haven't felt the need for more but I'm just curious about the kitayama. After watching literally all your stone videos i dabbled in your knife vids and bought the enso 5.5 utility knife and wanted the sharpest edge .
      So i was considering more stones.
