Really good to see a video with the sharpening and conclusion separated. It feels like it gives a more realistic view on the sharpening and stones when you show a true sharpening session. You get a better idea how fast they are, what they sound like, how often you have to wet them etc etc... Good video!
I just got into sharpening. I for a first time, put your video in front of me and mimicked your motion. I have to say I noticed that I had to start with a about a 300 grit to get that bur. I then moved to a 600 than 1200. That's all I had at start. The junk knives came out sharp not razor but did cut paper nicely. Thanks. I realize this is an older video. Hopefully I will hone my skill as well as my knifes.

With the "buy right the first time" philosophy... This is my first set of stones. I was given a set of German knives by a relative who upgraded and added a Victorianox chefs knife and have been learning the ins and outs of sharpening on stones. I grew up with pocket knives and a ceramic steel, but it's taken me a while to get used to the muscle memory for stones. It took me a while to get there on my end, but the stones and the bridge don't seem to have ever been a problem. I can now get everything in the kitchen razor sharp. (Yesterday I bought a King KDS 1000/6000 for a friend, I imagine he'll be kind enough to let me try it out.) (:
I'm an amateur "chef" who likes sharp knives. After wasting my $$$ on a Wicked Edge that put less of an edge than my 40 year old Lansky Sharpener, I have been on the fence about this Kramer Sharpening kit. Five minutes after watching your unboxing review, I purchased. Paid for this with the sale of that Wicked Edge and still have cash left over!! Thanks for this great video. I have enjoyed several of your other videos too.
If you can't put an edge on a knife with a wicked edge system then you are doing it wrong. Sharpening with a wicked edge is much easier than free hand sharpening but the system has some limitations on angle and size of the knife.
I like being able to hear the blade running over the stone. I've notice there is a difference in sounds between stones. Some of them give me a headache, so being able to hear them is very nice!
Respectfully. Why are you so surprised at the quality? Bob Kramer is a legend not only in knife-making but also in his ability to sharpen free hand. He never compromises quality. Have you seen the UA-cam videos of him free hand sharpening? You and Bob should have a throwdown! Keep up the great videos!
So I bought the Kramer water bridge and cleaning stone and the stones you recommended the King 300, King 1000, and Suihero 5000 grit on Amazon.for a total of $188 waaay cheaper than the $300 Kramer/Zwilling kit
I’m just starting out with stones. I have a small collection of pocket knives and multi tools. Nothing as fancy as your beautiful chef knives. I am afraid of damaging my more expensive knives so to start I purchased a 3 stone kit from Walmart... the stones are simply corse,medium and fine. Reviews I’ve seen on UA-cam people are able to use the same kit to produce a nice edge (paper test, shaving). After watching a handful of your videos I’m feeling more confident. Wish me luck! As I improve I’ll upgrade to better quality stones. Last thing I’ll say is it’s frustrating. You make sharpening look so effortless. My first attempt had my wife laughing at me as my result was a blade dulled more then when I started.

When I first saw this sharpening set, I was super pumped toward buying it; then, I saw the 300 dollar price tag! I winded up buying a King KDS. Even though I prefer a splash and go, you can't go wrong for 45 bucks.

I really appreciate that you don’t speak during the sharpening process. It allows the viewer to listen and recognize the different characteristics of the stones. Acoustic feedback is an important element of the sharpening process and one that’s not recognized enough. Yes- tactile feedback is critical but your ear can also tell you how things are going. Based on the Kramer reputation and this video, I picked this up from C&M, along with the Kramer CS this weekend for 20% off. In comparing the equivalent Chosera stones and adding the necessary bridge to equal this kit, I found this kit to be less expensive by nearly $100. After many years of experience (and money wasted on cheap items), I too fall into the "buy right the first time" philosophy camp... Talking or not talking, I like all your videos the same. I learn a lot either way. Keep up the great work!
That's my project for this evening! I've never sharpened on a whetstone of any kind, so even though I've watched you do it several dozen times on many videos, I have to find and watch your beginner one again to make sure I do it right. Luckily, I have 10+ knives I don't care about to get it right. :D
UPDATE: So I finally got around to playing with the set. I watched the Kramer video, which is basically useless in comparison to what your provide. I started with my favorite lousy knife, an old 6" Wusthof chef's knife that was sharp as a spoon. The 400 got a LOT of material off, there was a LOT of dark slurry. I kept inspecting it with my 30x jeweler's loupe and it did not seem as if I was able to get a burr at all. After 10 minutes, I moved on on to the 1,000 and worked on that for about 10 minutes as well. It seems like that would be too much time, but I was concentrating on technique, angle and trying to use the whole stone since it was my first try. The 1,000 also got a lot of material off and I still could not find a discernible burr. The 5,000 is now permanently marked by all the material it took off. I used it for about 5 minutes and stropped with it to finish up. The outcome is a MUCH sharper knife that cuts A LOT better. It even cuts paper, but not cleanly or smoothly at all. I am certain this is operator inadequacy and not related to the stones. I am happy with the set, the stones are perfect and the stand is stable. Now if I could only find a hands-on class to be able to get feedback on technique, I'd be golden. Thanks again Ryky.

Seeing you cut through the paper makes me realise how dull my “sharp” knives are. I use dads chisel stone which is appx 1000 grit and 3000.. however it has a massive hollow out of the middle and I struggle to get sharp edges as the knives cut into the stone
This video is 3 years old. Remember watch it before go and buy my kramer whetstone kit. So saying that its been 3 years using this kit for sharpening my wusthof pro knives that use daily in my work (BBQ pitmaster) and my home knives that are more walmart knives. and the stones are still smooth and flat as the day 1.

Nice video. I think whether you're talking or not, it's nice to be able to have some text on the screen to let us know which grit it is. A couple of reasons I would enjoy this: 1) Sometimes I forget which one you're using. 2) If I want to skim through your video to find a specific grit, I don't like having to find it by guess/check/listen method. FWIW to me the 1k Chocera is the gold standard for Nakato stones! I prefer the softer feel of the Chocera stones vs the Shapton Pro or Glass. That said the 320 Shapton Pro is one of my favorite Arato stones. The Chocera 10k is probably the best synthetic Shiageto I have ever used. If I could only have one stone for everything I could probably survive with just the 1k Chocera (although that would suck as I have at least 60 synthetic and over a dozen natural!). Weird to have a single Nugura stone for all of them! Each grit should have its own Tomo Nugura IMO.

I won primarily Shun and also Victorinox, Wufstof, and Mercer. My question is, in sharpening the European knives, do you recommend the whetstone or use of an electric sharpener? Thanks!!
Ryky, I am going to go to the Hamono Festival in Seki City in October 2022. A date hasn't been set this far out, yet. But, I will be in either Kyoto or Osaka in early and mid-October and want to go to the festival. What should I look for? Will there be the "big name" (Miyabi) knives there? Or, will there only be very obscure "boutique" knives that I won't know? Or, will there be everything? I have read that the prices of knives at this festival are fantastic. I want to bring a knife home, or have it shipped, but I don't want to spend over 200 USD. What should I look for? Thanks, from a long time subscriber.
@Burrfection would you consider doing a video where you show off how some knives with really different blade profiles perform cutting different things? Like an onion, meat, and a leafy herb. I think it would be cool to get your opinion on some of the different styles!
You can use a magnet to check if the bolts are stainless by seeing if a magnet is attracted to them. If it is attracted them they aren't stainless. That trick won't work with stainless knife blades because it seems they still have enough carbon to make them magnetic. You probably already know this but I thought I'd comment just in case. 10:26 Naniwa or chosera? Chosera is a line made by Naniwa. And I'm pretty sure Naniwa made this set for Bob Kramer. It's just a rebranded chosera/professional stone.
Burrfection I'm sure they feel different, but I know he says Naniwa made his stones from the chosera line im two separate videos. Regardless, I'm sure Kramer made sure the quality was up to his standards before production.
@@Jim00000 Naniwa made the stones but they are not the same as the Choseras. If you wanna buy em all and check you'll see that that is true, but I already did, they're not the same.
My brother gave me a Kramer 1000x stone and I recently (11 months ago) got into Traditional WetShaving and thinking about going to straight razors . This will work if I also get a few higher grit stones.????

Great video. You would think with a high quality set like this they would at least include a storage case of some sort to keep it together. But otherwise this set looks like a good investment.
Golly check out the DVD. Kramer has made some nice videos... perhaps there are some good ones in it. A local kitchen shop has a service sharpening with these and they are NICE stones. It pays to have someone hone your knives if you do not do it often yourself. As always a cutting board is a a better investment if you have a local sharpening service. Those without a diamond flattening hone might just use the stones themselves to condition the surface flat. Take the coarse and worry the next hone smooth then the next then then the next. The top stone will tend to be concave so alternate top and bottom. The advantage is the surface of the hone will not have deep tracks and scratches that get in the way of the grit level.
Your demo video is so excellent, and I learn a lot from you. Thank you very much. Besides, would you teach how to sharpen the knife to cut a hair easily ? I do my best to sharpen my knife, but I never arrive the goal. Thanks.
Surprised you didnt talk about or show the the finish of the 5k. If it was satin or mirror. Like the bamboo base. It adds a touch of class to the work station. And since they are splash and go a tub or sink is optional. Also i noticed you used Bobs style of stropping on the 5k. Edge leading. Looked pretty sharp for not stropping on leather.
chuckyz2 The polishing comes out pretty close to a mirror finish with the 5000. Found this kit deeply discounted by someone who wasn't into sharpening on eBay and have never looked back. Great kit.
I really want to see your side by side comparison of these stones against the very best other synthetic stones that exist, mainly Choseras. I do believe, from experience with MANY different, that - as far as synthetic stones go - in sole terms of speed and final edge performance (leaving feeling and other factors aside) these - Chosera Glass Stones - are the very best synthetic stones that currently exist in the world. Of course, they still can’t beat the unique type of polish and final aesthetic of natural stones, though... but, again, for final edge performance versus time spent sharpening ratio alone: you just can’t beat the Naniwa Chosera Glass stones (branded Kramer stones by Zwilling), not even with diamond stones of any kind, Cerax, Shaptons, regular Choseras... these are faster and deliver a final better performance from my experience, regular Choseras coming very close only.
The sharpening style you use in this video is different than what I have seen you use in the past. Is that just for these stones? Or is it an evolution of your style? Thanks for another great video!

Does that knife have a scandi grind on it? I have a newer Dalstrong that is a flat grind and its excellent but that looks a lot like it has a scandi grind on it that they tried to hide with the hammer marks.
How’s that so expensive. I got a professional 400,1k and 3k in a set and a very expensive sinkbridge and still only paid around 300€. How is that 400$.
I can't find it in the channel, but what's the idea behind the glass stones? My assumption that the glass provides a strong base for the whetstone, sou you can use practically all of it, while if it is a whole whetstone brick, you won't be able to use the last several mm because of the stone's integrity, stone holders are in the way, etc. Also, glass is cheaper than the whetstone, so it would make the hole thing cheaper. Am I correct here? :D
Wait, if Chosera is a separate stone company with its own manufacturing plant, why would saying his stones were made by Chosera be an incorrect statement?
point is, Chosera has always been known to be a line within Naniwa. So, when Bob Cramer says these stones are "MADE BY CHOSERA" and not NANIWA, it confused a lot of people.

I won primarily Shun and also Victorinox, Wufstof, and Mercer. My question is, in sharpening the European knives, do you recommend the whetstone or use of an electric sharpener? Thanks!!
if you are asking what i use personally, i use whetstones. for everyone else who doesn't have the time or patience, an electric sharpening is fine.

Ryky, I am going to go to the Hamono Festival in Seki City in October 2022. A date hasn't been set this far out, yet. But, I will be in either Kyoto or Osaka in early and mid-October and want to go to the festival. What should I look for? Will there be the "big name" (Miyabi) knives there? Or, will there only be very obscure "boutique" knives that I won't know? Or, will there be everything? I have read that the prices of knives at this festival are fantastic. I want to bring a knife home, or have it shipped, but I don't want to spend over 200 USD. What should I look for? Thanks, from a long time subscriber.

@Burrfection would you consider doing a video where you show off how some knives with really different blade profiles perform cutting different things? Like an onion, meat, and a leafy herb. I think it would be cool to get your opinion on some of the different styles!

You can use a magnet to check if the bolts are stainless by seeing if a magnet is attracted to them. If it is attracted them they aren't stainless.
That trick won't work with stainless knife blades because it seems they still have enough carbon to make them magnetic. You probably already know this but I thought I'd comment just in case. Great vids man thanks!

10:26 Naniwa or chosera? Chosera is a line made by Naniwa. And I'm pretty sure Naniwa made this set for Bob Kramer. It's just a rebranded chosera/professional stone.
these are not a rebrand of the chosera stones. they feel different.
Burrfection I'm sure they feel different, but I know he says Naniwa made his stones from the chosera line im two separate videos. Regardless, I'm sure Kramer made sure the quality was up to his standards before production.

My brother gave me a Kramer 1000x stone and I recently (11 months ago) got into Traditional WetShaving and thinking about going to straight razors . This will work if I also get a few higher grit stones.????

Great video. You would think with a high quality set like this they would at least include a storage case of some sort to keep it together. But otherwise this set looks like a good investment.

not if you move your knife around the sides and edges while sharpening.
Golly check out the DVD. Kramer has made some nice videos... perhaps there are some good ones in it.
A local kitchen shop has a service sharpening with these and they are NICE stones. It pays to have someone hone your knives if you do not do it often yourself. As always a cutting board is a a better investment if you have a local sharpening service.
Those without a diamond flattening hone might just use the stones themselves to condition the surface flat.
Take the coarse and worry the next hone smooth then the next then then the next. The top stone will tend to be concave so alternate top and bottom. The advantage is the surface of the hone will not have deep tracks and scratches
that get in the way of the grit level.

Why are the strokes pulled toward you at ‘a 30 or so degree and the stroke;s away from you at 15 or so degrees?
Surprised you didnt talk about or show the the finish of the 5k. If it was satin or mirror. Like the bamboo base. It adds a touch of class to the work station. And since they are splash and go a tub or sink is optional. Also i noticed you used Bobs style of stropping on the 5k. Edge leading. Looked pretty sharp for not stropping on leather.

The polishing comes out pretty close to a mirror finish with the 5000.
Found this kit deeply discounted by someone who wasn't into sharpening on eBay and have never looked back.

Right out of the gate when you started sharpening on the 400 I thought that it didn't sound right it seemed to be not course enough

I really want to see your side by side comparison of these stones against the very best other synthetic stones that exist, mainly Choseras. I do believe, from experience with MANY different, that - as far as synthetic stones go - in sole terms of speed and final edge performance (leaving feeling and other factors aside) these - Chosera Glass Stones - are the very best synthetic stones that currently exist in the world. Of course, they still can’t beat the unique type of polish and final aesthetic of natural stones, though... but, again, for final edge performance versus time spent sharpening ratio alone: you just can’t beat the Naniwa Chosera Glass stones (branded Kramer stones by Zwilling), not even with diamond stones of any kind, Cerax, Shaptons, regular Choseras... these are faster and deliver a final better performance from my experience, regular Choseras coming very close only.
The sharpening style you use in this video is different than what I have seen you use in the past. Is that just for these stones? Or is it an evolution of your style? Thanks for another great video!
for knives with curved profiles, i usually go edge leading, and yes, my style is always changing, sometimes for better, and sometimes for the worse.

i DID..... but.... seldom used it. i rarely go above 3K for my personal knives. 10K for mirror polishing on certain knives.

only if your knife is very dull. most of the time, starting off at 1000 is perfectly fine

Just quick question, why don’t you sharpen to 10000 or above?
Does that knife have a scandi grind on it? I have a newer Dalstrong that is a flat grind and its excellent but that looks a lot like it has a scandi grind on it that they tried to hide with the hammer marks.
Does it come with a storage box etc? If not what can you use to store the kit?

I can't find it in the channel, but what's the idea behind the glass stones? My assumption that the glass provides a strong base for the whetstone, sou you can use practically all of it, while if it is a whole whetstone brick, you won't be able to use the last several mm because of the stone's integrity, stone holders are in the way, etc. Also, glass is cheaper than the whetstone, so it would make the hole thing cheaper.

glass can be molded very flat and it does not warp and can be tempered to be relatively hard but not brittle

Wait, if Chosera is a separate stone company with its own manufacturing plant, why would saying his stones were made by Chosera be an incorrect statement?
point is, Chosera has always been known to be a line within Naniwa. So, when Bob Cramer says these stones are "MADE BY CHOSERA" and not NANIWA, it confused a lot of people.
OK I’m a little confused. I thought you never wanted to take the edge of your knife against the grain of the stone for fear cutting into the stone?
If you control the angle and pressure right that would not be a huge risk. I do not recommend those new to sharpening to do that
