I don't think you have to worry about cooking with (hard) cider, if alcohol is a concern, unless perhaps its a religious worry, as the boiling point of ethanol is 78 degrees C. as Pork has to be cooked at 150 degrees C there will be zero alcohol left in the dish. The difference is, cider apples are not nice to eat, even juiced they have a lot more tannin and acidity, the fermentation won't happen if the acidity is too low, and nearly all the sugar will be converted. So once fermented the cider is low in sugar and the alcohol will evaporate in the cooking process, its not quite the same thing to cook with apple juice which is high in sugar and low in tannin (bitter elements) perhaps add some lemon juice for acidity and a cup of stewed tea for tannin.

Hi Nicky! I made this in the instant pot and it was scrummy! The only difference was, is that I fried the lardons first removed them and then used the bacon fat to brown off the pork. Great recipe. I didn't have any cider or apple juice so used just chicken stock for all the liquid and then mixed in a couple of big spoonfuls of Apple sauce. Worked a treat.

I just made that for lunch, on this already snowy Canadian Fall day. Mashed potatoes and boiled kale paired with it perfectly. (remember to grab a bit of homemade bread to wipe the last bits out of the cooking pot 😋
For a real winter warmer, I add crispy sage dumplings. Family really love dumplings and they go so well together with the pork casserole. After many years, I've settled on John Kirkwood's recipe on YT for the dumplings but be glad to view your recipe on dumplings as well if I can find it.

Thanks for providing the option to cook without alcohol! I am allergic (I get a reaction from any drink with alcohol in it, beer, wine, hard cider, etc. any of it) so even though most alcohol cooks off I still prefer to cook without alcohol just to be on the safe side.

I’ve got a request, my wife is from London and we live in California. Something she has asked me to make as I like cooking is good old English sausage rolls.. I’ve looked at a ton of videos and web sites seems like everyone has their own recipes.. what’s your favorite.. I’ve made some of your recipes and they’ve been very good.. but getting English sausage in California is at this time pretty close to finding chicken lips.. lol. So I plan on making my own sausage.. hopefully you can clue me in on a spice blend to get the job done.. thanks for your videos.

i think it would be just as good with beef! but maybe use an amber beer and lemon juice instead of cider for beef.

Pre heat oven then eventually cook. Very expensive now with our severe gas and electric prices. Lovely enjoyable video.
She also mentioned using a slow cooker. Do that instead of whining about using an oven.

Instead of bacon would a smoked sausage like kielbasa work? I hate frying bacon.

Try adding greek yogurt instead, less calories but still get the creaminess. And 60ml of cream is only 1 tablespoon per portion
I would be more concerned about to much sugar than cream.
