    My husband loves to order this at the dimsum shop but I've never really known how to make it.Thanks Cooking Ah Pa. Just wondering if 10mins steaming time would not b enough to soften the ribs till it's melt in the mouth texture?

    After fried the fermented black beans, it wil be much more aroma. But if you add in some water and tapioca flour, the dish will be much more smoother and tender.

    Wow this is my ultimate fav always order this when we are having dim sum with that said it’s always laced with MSG so thank you. I’m binge watching your vids btw have you ever tried doing Char Siew Pau?

      cindy chong the meat could be over-cooked, or the ribs u bought is not the most tender part.

    Is there any other way to clean the spare ribs? Can I boil the raw spare ribs for 1-2 minutes to wash the blood? Thx for the tips

    In most recipes for this dish that I have seen, corn starch was added to the marinated meat before steaming for extra smooth and silky texture. Don't you think starch is necessary in this dish?

      @@CookingAhPa As a matter of fact I have never eaten that dish at a dim sum restaurant or at home, so I do not know if I like it that way. I am planning to make it soon, I will have to look for fermented soybeans... By the way, can laoganma (soybeans and chilli flakes in oil) be used as a substitute for fermented soybeans?

      I think you have to steam it in a separate bowl, just put enough water so it doesn't evaporate as easy., if you have a dimsum set, much better,
