  • I LOVE dim sum. And one of the things I always get every time I go to dim sum is these steamed pork spare ribs with Chinese black beans. Most dishes you get at dim sum are not easy to recreate at home, but this one is an exception-it is super simple! In this video I also show you how to steam dishes even if you don't have an actual steamer at home. Enjoy!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.     I love how you've garnished it! Traditionally it's only garnished with julienned red chilli. But looks so much more vibrant with the scallions!

    Im in the philippine and I just cooked it today. I made a sauce that I can dip it in using lemon, soy sauce aNd chilli flakes. This dish is a winner!!!

    Pai gwat is one of my standard dim sum orders, along with siu mai and har gau. I vary other dim sum, but these three nearly always feature in my choice. All your recipes turn out great for me, so I look forward to reproducing this in my little kitchen.

    Them black beans are the real deal I made some monday, I did mine neck bone style. boiled all the water then added in the beans and chicken broth bell pepper green onions and celery. Alittle wine soy sauce and 5 spice along with sesame. It was so good with noodles.

    I would say that this recipe is better than the average dim sum spareribs. I like the idea of using Thai soya source and also the diced red pepper to complete the dish. This is the extra flare and creativity that I enjoy from this show.

      Btw we call the Black Bean "Dou see" as well in Cantonese, so incredible that it has exactly the same sounds / words in Thai as well.

    we call black beans in the phils also taosi. we order this spare ribs rice toppings with chili flakes in oil plus kalamansi as dipping sauce. its selling like hotcakes in chinese teahouses that sometimes it doesnt reach dinner time.

    I usually soak and wash the ribs beforehand until it turns white or lighter color and dry it before marinating.

    I’m Cantonese and steamed spareribs is in the standard rotation for dinner when I was a child. I don’t understand how it became seen as a dim sum dish these last few decades.

    I make this 2 ways. one is steamed like you did here. The other is to make rice. For that, I marinate it similar to the way you do but instead of steaming it. I first cook them in a pot with oil, then add rice and chicken stock. 15-20 mins later, you will have a pot of Spareribs Black Beans and rice (crispy rice on the botton is always a plus). On occasions, I would add chopped bitter melon to the rice so we have veggies.

    I notice that garlic and ginger paste is used worldwide--Indian, Lebanese, Italian, Chinese, Thai, Korean, everyone seems to begin the dish with this paste.

    I made this two ways ... 1. Followed the recipe and it was great, just like in a dim sum restaurant. 2. reduced soy sauce to control saltiness and reduced the garlic. I substituted black bean and garlic sauce instead of just the black beans. The saltiness and garlic came from the sauce. It ended up tastier to me.

    lol the Thai name for black soy beans is exactly the same as the Cantonese/Teochew counterpart 豆豉. 豆/dau is "bean", while 豉/si is "fermented bean".

      oh btw soy sauce is called 豉油 in both Cantonese dialect and Teochew dialect, however the pronunciations are a little different, in Cantonese it's si yau, in Teochew dialect it's si iu, also known as see ew in Pad See Ew

      Jello Fel in the Filipino language I speak called Ilocano we call soy sauce "tau yu". Do you think that came from one of the Chinese languages probably?

      tau yu is the dialect of southern Fujian - also called 'Min Nan' in mandarin and also known as 'Hokkien'.

    You can totally steam this spare ribs dish on a bed of rice in Claypot. Claypot spare ribs rice. All the lovely sauce will absorb by the rice. By the way, great recipe.

    In the cambodian language we call it siang which is pronounced like the word for sound in thai there are a few different kinds like black beans sauce and the sweet kind and also a super salty one that's brown in color 😊
