Hi Khoan. My favourite dish is Chicken or Beef with crispy noodles in sauce. I never know what the sauce is though or how to make it. Been told it's a Chinese gravy based sauce before. Other have said it's Oyster sauce based. Any ideas or be good to see something like this made :)

Love this channel. Question, I tried Cantonese chicken chow mein for the first time a few days ago and the sauce was thick and gloopy. Like slime. Is that normal? I've never come across that before. It tasted like chicken sauce.
If you made it yourself, you used too much corn starch to thicken the sauce or potato starch as he used in this video. You only need a table soon mixed with water, mix with a little bit of water, add half in. The heat thickens it up, so you must wait for the heat to thicken the sauce, keep adding until your desired thickness. If you leave it on the heat, it will keep thickening - so when you get your desired thickness, take it off the heat.
What were the two things you added before you added the soy sauce. There were two things in plastic bottles that were behind you on your right. thank you
did you blanch the vegetable first? When I have this dish at restaurants, the sauce is usually very pale/white compared to other noodle meals. What seasoning is in the sauce, I think I saw wine, and a little dark soya, did you just add potato starch and water to that?
+Czeshire Cat If you're making it at home, then yes, blanch your vegetables first. However, restaurants don't put any soya sauce into this kind of dish and that's why it's pale white. In the end, you'll need to finish off this dish with thickening agents, such as potato starch or corn flour mixed in a tiny bit of water. Seasoning in sauce : Salt, sugar, MSG ( Or chicken stock ), pepper, sesame oil, wine.
12 years later and this still looks like one of the best seafood chow mein recipes!

Yep, MSG or we can just substitute with salt. The soy sauce has an MSG type compound in it already, so MSG isn't necessary.
