One other thing, when I use ham hocks I like to pour off the 1st boiled pot, so if I used a crockpot I would parboil it, pour that water out, then put it in the crockpot.

Needs some good smoked bacon grease and a big skillet (cast iron of course) of cornbread (cooked with bacon grease in the skillet and some poured into the batter) 😁❤

Besides having cornbread with pot liquor as a "meal," pot liquor is good to maintain healthy skin, eyes and hair. And as a side-bar, I am glad to see that you tend to use LESS salt and MORE garlic powder since high blood pressure is a genetic marker for our core racial group. Keep 'em coming and thank you!

This recipe looks amazing. I have several Crock Pots and use them a lot. I have never cooked Collard Greens in the Crock Pot, but will do so today. I will be off to the market to buy two bunches of greens. Thank you for sharing.
Update: everything is in the Crock Pot except for the greens and the vinegar. The greens have been prepped and will be added at the four-hour mark. This should be an awesome recipe.
Update 2: the greens were not cooked after the six-hour mark. I had to cook nine hours in my Crock Pot. The two jalapenos with the seeds and membranes included, provided enough heat. In fact, all the spices worked well together. I made corn muffins and enjoyed both items together.

Nice James. The Crock Pot version turns out the exact same way as the stove top version. Really helps out on the holidays when your cooking a lot of food and the burners are all in use. With the Crock Pot you can just set it and forget it and produce some delicious Greens.

Awesome, I finally found someone besides me that uses a crockpot to cook Collards, I always use smoked neck bones, often let them cook overnight low and slow to really extract the flavor, the “pot Liquor “ as we call it in the south with a crusty brown slice of cornbread, can’t be beat.

my mother was raised in the low country of sc, she was the best mother I've ever seen.... she would look the greens, rinse-inspect for bugs or dirt. then cut out any stems bigger than 1/16 in. then tear the greens by hand. cook a pound of bacon, put that grease in your pressure cooker on med-high. fold in the greens a handful at a time scorching and wilting them. add water and salt and two tbs of sugar to remove tartness. add vinegar after to taste. heavy vinegar at this point will cure cancer, ok I know it works on the flu.

I cooked my hocks overnight. Used some bnls. country style hocks, (Salt Cured), pulled them out this morning to let them cool so I could shred by hand and add later to the collards. Collards are now in the ham hock juice cooking. Going to add a little cabbage to the collards to sweeten them up a bit. Add a little homemade pepper vinegar to the greens and let them marinate and cook. Gonna eat some collards, hock meat, cornbread and have a side of that delicious pot liquor. Going to be good. Loved your recipe, though. Nice and simple.

That looks aMazing! Love greens. Collard, chard, turnip, kale, beet....never sure what to do with mustard greens. Any tips or ideas?
P.S. The scent must be wonderful. The richness of the meat, the tang of the vinegar. Heavenly.
Watching you scoop it out into a bowl leaving the broth behind, well, I would save the broth for later and serve it in a big mug with a few sourdough croutons sprinkled on and sip it. This is all your fault. 😉 making this today.

Good idea using the crockpot. I used my pressure cooker and killed them in 40 minutes...too long! Next time I will try for less time or use the crockpot instead. Think I will add a jalapeño too, thanks for sharing your recipe!
