HOMEMADE MOKA IRISH CREAM LIQUEUR RECIPE
INGREDIENTS
375 ml Irish Whisky
150 gr Sugar
100 gr Water
150 gr Heavy cream
150 ml Sweet condensed milk
1 teaspoon Corse ground coffee
1 table spoon Unsweetened cacao powder
1 gr Vanilla pod sliced in 2 lenght wise
Pinch freshly Grated nutmeg
1/2 teaspoon Bitter almond extract
METHOD
- In a sous-vide bag, place all ingredients except for the whisky and almon extract.
- Seal the bag and place in water at 70 degrees celcius for 30 minutes using a precision immersion cooker.
- If you don't have sous-vide bags and immersion cooker, cook it on the stove making sure not to exceed 75 degrees using a thermometer.
- Then fine strain the mixture using nut milk bags or several layers of cheese cloth.
- Add the Whisky and almond extract
- Blend at high speed for 30 seconds and bottle up!

Both channels inspired me of course. If you are new to my channel, I been making a lot of Clarified cocktails since I started UA-cam and those are amongst my top videos. I also make a lot of “elevated classic cocktail”. But I still want to reach a larger crowd so I though making the clarified cocktail next to the regular and the elevated version would be a right fit.

Seems like you 'fail' upwards anyway! It looks so good! The story of Baileys creation is really funny, two hungover boys in a Marketing office in London made the worlds most popular liqueur... but they didn't put even half as much love in as you!

If I may, suggest a blending a little xantham gum in the mix to keep it stable. That should stop the shifting and keep the liquor the same quality everytime :)

Great idea but a little goes a very long way. I've heard between 0.01-0.05% By weight for just applications but may be off. Too much and it congeals. I need to get a precision scale!

I had no idea you could even make your own Bailey's! This is great how not too difficult it looks to make this. Do you like yours more than Bailey's?
I made one that recommended vodka, obviously a different flavor but still quite good.
there's a secret ingredient that bailey's don't reveal it on the bottle and no other Irish cream brands use it which is brandy!

I thought of making home irish coffee cream using my homemade cold brew liqueur with whiskey base and mixing it with some kind of cream and adding a bit of vanilla. I’m surpised how little coffe you recipe has!
For me Coffee is not the dominant flavour in this. But that’s the beauty with DIY project. You make it the want you want to drink it
Have you tried to eliminate the nutmeg? I bet it would be close to baileys then. But you can bet im gonna put nutmeg in my next batch. I bet its Awesome.

Believe it or not I used instant coffee bushmills Irish whiskey cream and sugar and believe it or not it tastes exactly like Baileys I picked bushmills for some reason it just tastes better than Jameson

Hmm I wonder if you could age it more than a month. I do have eggnog that I age for 12 to 6 months (reminds me I need to make a batch), maybe need to add more whiskey.
Good recipe :) I'm not sure cause the book isn't near me at me moment, but I believe Dave Arnold have a solution to stabilize creamy liquor in Cocktail Chemistry, without using centrifugeuse. But it maybe a false souvenir...

@@TrufflesOnTheRocks Ok, not sure if it works here but, page 54, he use TIC Gums Ticaloid 210S (wich is a all natural stabilizer for sauce as they say on website) to stabilize butter syrup. Guess it can work with a bailey-like liquor :)

What's life without experimentation?
The reason it tasted wrong is that you put coffee in the recipe (as does every other online recipe). Baileys does not contain coffee. It is quite often mixed with coffee - but Baileys is not a coffee liquor. 😎
Funny thing is, ”moka” means mistake in finnish :D
