HOW TO MAKE A LONG ISLAND ICED TEA COCKTAIL RECIPE
3/4 OZ VODKA
3/4 OZ GIN
3/4 OZ TEQUILA
3/4 OZ RUM
3/4 OZ ORANGE LIQUEUR
3/4 OZ LEMON JUICE
1/2 OZ SIMPLE SYRUP
SHAKE AND STRAIN VER ICE.
TOP WITH ABOUT 1.5 OZ OF COKE
HOW TO MAKE A CLARIFIED LONG ISLAND ICED TEA COCKTAIL
3 oz Vodka
3 oz Gin
3 oz Tequila
3 oz Rum
3 oz Orange liqueur
3 oz Lime juice
1.5 oz Simple syrup
8 oz Coke
1 oz Whole milk
In a glass container, pour the alcohol, syrup and lime juice.
In a seperate container, pour the Coke and milk.
Then, pour the coke mixture over the cocktail mix.
Set aside for 30 minutes
then filter through a coffee filter (following the advices in the video)
Add 2 oz of filtered water
Place in the frdige until ice cold.
You are now ready to carbonate with your Soda maker (no more than 275ml of cocktail per 1L bottle)

The Long Island Iced Tea scarred me for life. It was my first go-to cocktail when I was young and dumb. Now I’m just dumb. Anyway, I don’t have a love/hate relationship with LIIT, just a good ol’ hate/hate relationship. Haha. I am tempted to try the clarified version though. 🥴

I very much appreciate the cocktail content and I know that is the focus of this channel. I would love an episode here and there about your favorite liquors to sip neat or on the rocks - particularly if you have any suggestions that are not as well known. For example, I got a great suggestion from my favorite local liquor store employee to try Kirk & Sweeney 12 Year Old Rum neat or on the rocks and WOW!

if you like kirk & sweeny, maybe try el dorado 15 or real mccoy 12. i think either of those would work in a similar role as something aged and on the sweeter side

I mean there are different versions of the lIIT with different sodas, so yeah they definitely exist

The Old Man bar in Hong Kong does something similar for their “To have and have not” cocktail- burnt oat rum, “rectified cola” and vanilla “lather”

99% of the time I make test before shooting but when I don't ... this is the kind of things that can happen and as you say... it's part of the process. Cheers!
I know liits are typically made with white liquors but I'm a rebel and I use .5oz of: mid shelf gold rum (like mount gay), reposado tequila (like espolon reposado) gin (like tanqueray) and vodka (like ketel one), .5oz of grand Marnier, add 1oz diy sour mix (simple syrup+lemon juice+lime juice), and splash of coke over ice in highball. Honestly I love long island iced teas and order them from different places all the time, mostly restaurants as I'm not a bar guy, and I have to say I've never seen them made the same way twice. Everyone changes it up and the only version I've never really had was one with standard ingredients (4 white liquors+triple sec+sour mix+cola)
This was very very cool I am actually a fan of the long island, I'm sure if I was a bartender at some point I would hate it. I would have never thought to do the clarification on this cocktail. Great video!

I use half an ounce in all my LITs to keep the spirit at 2 ounces because well you don't want 3 ounces in a drink at a bar. But also it's a little more balanced as well. 3/4 of an ounce feels much for me as well

Awesome idea! Great vid. Will definitely try! Is there a reason why you're using a Sodastream instead of an iSi whipper/siphon? I have a siphon, which does not experience problems with carbonating diluted syrups, so I guess I should be alright then?

If you make a single portion so you still use a whole ounce of whole milk like you would in a whiskey sour or do you lower it by 1/4 aswel
It makes sense that the milk is curdling, coke is serving as an acidifier the same as it would for making cottage cheese, cream cheese, or ricotta.

You can also make this in soda bottle,in my case I use isi soda bottle for "ready" fizzy cocktails

Very cool.. since its a pain to make when you're busy. would you consider making a large batch? (eg a bottle of each ingredient). shouldn't have a problem with shelf life, and when someone asks for it, simple just pouring it.
Milk washed cocktails have an almost forever shelf life so yes it is totally an option.
Tip. Carbonate in a 1.5 litre cola bottle with the help of an adapter that's used to carbonate beer. Either the right pressure to start with and leave for 24 hours or over pressure and roll and twist it (not to much tho you don't want it to explode) to do it more quickly. This is the process we force carbonate beer after brewing to be able to skip the bottle fermentation part for carbonation

I actually love long island ice teas, though I don't order them when bartenders are busy, most often I like making them at home because I have discovered that changing even one brand of one ingredient such as rum or tequila can really change the outcome of the drink. Now if you are getting the cheap stuff in it then yea definitely get a different drink because there isn't anything redeeming about a cheap long island.

Just caught the episode. I don't usually drink Long Island Ice Teas, but I've found that, when I make it, I like to skip the tequila and use tequila-based Patron Citronge for both the tequila and the orange liqueur. Also, I agree that lime is better than lemon in this drink. I generally prefer lime to lemon in drinks made with white spirits, because lime is more refreshing as far as I'm concerned. Also, it's hard for me to get lemons that are not very sour.
Did you know that Patron Citronge has been discontinued? You will have to find a replacement ;)

Congrats for the video! Just one quesiton: Why is not possible to use sweet liquiid in a sodastream? What if you wanna do a fizzy fruit juice for example?
Hey Riccardo, the problem with sweet liquids is they tend to get extra fizzy and explode when you carbonate them with a soda stream. You will make a mess and risk to break your machine ;)

I love the Long Island, but I don't frequent bars at rush hour to get smashed so...
I think you could simply clarify your LIT base and then dilute with a bit of heavily charged soda water to get a comparable end product. No need to mess with the sugar content just to charge the whole cocktail with the soda stream. Definitely will test this soon!
I was making that test in order to be able to bottle the drink as a ready to drink option for the bar I work at. Your idea could do it but not for that scenario. I need to improve the concept ;)

Thank you! Well if you have a ISI canister you could do it using co2 cartridge. But if you don’t have any of them, maybe try with a splash of soda

Maybe an idea, instead of dialuting and recarbonating, you could refrigerate the mixture and add seltzer to make it fizzy, I like to add extra co2 to ice cold water to make it extra fizzy so that could do the trick!

Thanks! YEah the initial idea was to carbonate the whole drink to make it extra "lively" instead of adding only 2 oz of sparkling in a 7 oz cocktail. But yes if you don't have a soda machine that can take sweet liquids, that's a good idea. P.S. there are some new brands of soda machines that works really well with sweet liquids. I have to get one of these.
If you buy a different model of the sodastream machine you can manualy control how much gas you put in with each press, so you can carbonate it slowly without it leaking out

Could we just filter the coke+milk mixture and add it later to the remaining booze instead of filtering the whole thing in order to save time? Im thinking about making a huge batch, like a bottle each of the liquors and then force carbonating using my homebrewing equipment (2.5 gal corny kegs attached to a co2 cilinder + pressure regulator).

I don't recommend it since the trials I made with coke and milk didn't yield a liquid as clear as a milk washed cocktail.
You can also make it clear by swapping the coke out for any clear drink ;)
You could if all you want is to change the colour of the drink but the idea of milk clarification is not for the colour. The clarity of the drink is a side effect but the main idea here is to change the molecule structure of the drink by filtering it through milk. A lot of flavour compunds are changed and that's what is mostly interesting about this process.

Love it, but as a challenge can it be clarified with anything else a side from using milk? Milk is heavy on lactose.
If lactose is a concern for you, I always use lactose free milk because Sefra is lactose intolerant. That said, you can also clarify with plant based milk or coconut milk if it’s fat enough. I didn’t master the oat milk clarification yet but I had some decent results in the past. I was actually thinking about making a side by side comparison in a video. You just convinced me to do it.

@@TrufflesOnTheRocks I have a machine called sparkel, you can carbonate any liquid… it uses carbonator packs (powders). Might work well for this application!

milk clarification is so interesting to me, since we can not get cream gin here I am thinking it may be a great way to make it here

@@TrufflesOnTheRocks not available in the USA, only seen it in London. It's got a wonderful creamy finish. Apparently since milk is used in the process it can't be shipped. Had it at the bar inside selfridges dept store.
What if i add coldbrew coffee in the jar as an extra ingridient, will it come out clarified aswell w the plus of coffee flavour?

How you know how much milk you need to use for your clarification in each recipe?
I usually go for 1:4 milk cocktail ratio

But instead of using that way of Carbonation, why dont use instead coke syrup (also removing the simple syrup) clarify it and then top with soda or Tonic Water?

The process will leave some flavour traces but not a "milk taste". It's more the whey that will be incorporated in the cocktail that will leave some flavours. Whey has a slightly dairy feel but it is very different and super subtle.
Why lime juice for the clarified butter lemon juice for the regular one?
Good question. Traditional LIIT is made with lemon but lime has a stronger taste that stands our better after milk clarification.

I've never had a Long Island, never made one for a customer (we get "sofisticated" customers here, ahem).
But a clarified one though... (never made a clarified drink either lol, maybe making a long island as my first clarified drink would be just peak home bartendering)

That’s not the point. Milk washing cocktail is a method used to change the flavour profil of a drink, change the texture and increase the shelf life. It has a side effect which is making the drink clear.
But why u dont make the long island mixture of the alcohol parts in a finished bottle and by order you just add the lemon juice and the coke
