    I am laughing at myself for my first trial at making butter this evening. Did all the mixing and had it all on the wisk just right. Took out the bowl after removal of the butter and took it to the sink to add the cold water. Stupid me, as I turned on the hot water and didn't see it until it had already melted all the butter I had just made. Major fail on my part. ;-( Oh, well, off to the market to get some heavy cream and try it all again. Darn, it sure looked good, too. Any rate, if you add salt to it, how much is the right amount to add? Thanks for the video.

      I believe a standard 1/4 lb stick of butter contains a 1/4 teaspoon of salt.

    Did this yesterday and worked perfectly. Tried again today and looked like it went to mayonnaise. Very weird

      Just let the mixer keep going it will turn to butter don't worry about the time. It will just take you longer

    Mine took about 15 to 20 minutes... i used 2 frozen/unthawed heavy whipping cream cartons.

    How come when I do what you did I don’t get the large clump of butter I only get small clumps then it turns into mayonnaise does the cream have to be cold because I was told room temp any ideas thank you nick

      So mine had the same result but for me it was because I let it go for too long. I did some research and it said that if your cream is too hot then it won't come together. Mine worked just fine straight out of the fridge. Also I would suggest keeping a close close eye on it. I walked away on my first batch and I missed the stage where the butter actually separated so it was a fail and I ended up having to start a new batch. In the new batch I ended up getting to the whipped cream stage really quickly and I watched the bowl like a hawk trying not to miss the butter stage. And I didn't! So now I have good homemade butter and buttermilk! I hope this helps you!

      Maria Tomich thank you I know what you are saying it started to clump but not enough when I did it and it worked the butter was one big clump and it only took about 7 min it is still a mystery I even called a dairy they told me to leave it out overnight that didn’t work so I tried it cold and it still did not work but it used to work for me maybe 9 out of 10 now it’s been six times and no butter it may be the humidity I am running out of money heavy cream is expensive thanks again nick

    What about adding a little salt to the butter?

      Add the salt after the butter is done, right before you package it. Keep the lid off in the fridge for a bit and come back to it and pat it dry with a clean paper towel. The salt will draw water out of the butter and if left to sit in it, the butter will go rancid quickly.

      It has to be heavy cream with preferably 40 percent fat content. Most stores sell it with 36 to 38% fat which you can use but I believe it will yield less butter. Some areas refer to heavy cream as whipping creme fyi.

    I use the dough hook on the stand mixer to wash the butter on low speed, after draining the buttermilk 1st time. Use ice cold filtered water, "I recommend Brita" because chlorine will change flavor.
    After washing 3 or 4 times the water is clear, pour it out, add salt and let the stand mixer do all the dirty work. After salting speed up the mixer and the butter will come off the bowl wall. Just pack the butter into containers. Easier not harder. I have a you tube video about this,

      You can do this with a hand whisk. You just have to keep whisking. Eventually the fat membranes will break open, creating the butter. You actually get better results doing it by hand.
